Pampered Chef Cucumber Lime Dip

Ingredients
- 1 brick cream cheese, softened
- 1 cucumber
- 1 garlic clove, minced (or tablespoon minced garlic
- 1 small onion
- 1 lime
- 1 jalapeno-optional

Step 1
Cut cucumber in half. Take one half and cut into quarters. Remove seeds from cucumber (or it will be watery) and cut lengthwise into sticks and place in manual food processor. You can peel cucumber first, however I like having the little crunch from the peel.
Peel onion, cut into quarters and place in food processor. You can also add garlic into food processor to mix.
Optional-slice jalapeno and add into food processor.
Finely chop all ingredients in food processor.
Place softened cream cheese in separate bowl. Zest entire lime into bowl, then cut in half to add lime juice. (I usually add juice from half the lime, add the rest of the ingredients and taste first so it does not get too watery or limey.)
Add all ingredients from food processor and mix well.
Slice remaining cucumber into slices for garnish and serve with raw vegetables or chips. Enjoy!
