Ingredients

  • 3 hard-cooked eggs
  • 1/2 pound fresh spinach
  • 1/2 cup white vinegar
  • 6 slices bacon
  • 1 small onion
  • 1 large tomato
  • 2 teaspoons dry mustard
  • 1 tablespoon sugar
  • 1/2 teaspoon pepper
  • dash garlic powder
  • 1 teaspoon salt
  • radish slices

Preparation

Step 1

Chop and fry bacon until crisp. Thinly slice onion; dice tomato. Remove bacon drippings. Chop 2 eggs. Slice remaining egg into 1/4" slices for garnish. Tear spinach into bite-sized pieces; mix with bacon, chopped eggs, onion and tomato. Combine reserved bacon drippings with vinegar, dry mustard, garlic powder, sugar, salt and pepper. Bring to a boil, stirring constantly. Pour over salad. Toss. Garnish with sliced egg and radish slices. Serve immediately. Yield: 8 servings.
