Citrus Green Bean Salad

Ingredients
- 2 lbs green beans
- 4 oranges 2 sliced, divided
- 1 T honey
- 1 t dijon mustard
- 2-3 T red wine
- 1/4 c EVOO
- salt and pepper to taste
- 1 lge red bell pepper, thinly sliced
- 1 small red onion thinly sliced

Preparation
Step 1
Cook green beans in boiling water until tender (2 to 3 minutes). Drain and submerge in cold running water. Remove and dry.
Dressing: Juice 2 oranges. Add honey, mustard and red wine vinegar. Slowly whisk in EVOO. Season with salt and pepper.
Add beans, peppers, onions and orange rounds to the bowl and coat with dressing.
