Ingredients
- 2 1/2 cups biscuit mix
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup sugar
- 1/2 cup dried cranberries
- 1 cup chopped walnuts
- 1 1/4 cup buttermilk
- 1/2 cup(1 stick) unsalted butter, softened
- 1 tsp vanilla extract
- 2 large eggs, slightly beaten

Step 1
preheat oven to 350 and generously grease 9 x 5 loaf pan. set aside dry ingredients. combine buttermilk, butter, vanilla and eggs in a large bowl and cream with a wooden spoon, fork or an electric mixer set on low speed.
add the dry ingredients to the buttermilk mixture and stir with a wooden spoon until just mixed. don't over-stir. pour the batter into the prepared loaf pan.
bake 50-55 minutes.
