1. Adjust oven rack to middle position and heat oven to 300 degrees
- 1 Bnls Beef Chuck Roast 3 1/2-4 Lbs
- Table salt and ground black pepper
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 rib celery, chopped
- 1 pound cremini or white mushrooms, quartered
- 2 tablespoons tomato paste
- 1 (14.5-ounce) can diced tomatoes
- 1/2 cup canned tomato sauce
- 2 teaspoons sugar
- 1/2 cup water
- 1 cup red wine (see note)
- 1 large head garlic, outer papery skins removed, then halved
- 1 sprig fresh thyme
- 1 sprig fresh rosemary

- 1 1/2 cups warm water
- 3 tablespoons olive oil (plus additional for pan bottom & drizzling)

- 4 teaspoons Pizza Dough Flavor, optional
- 1/4 cup Vermont cheese powder, optional

- 2 tablespoons juice from 1 lime
- 2 cups water
- 1 medium orange, halved

- Makes 8 sandwiches (2 Sandwiches)
- 30 minutes or fewer
- Pears add a sweet, juicy crunch to sandwiches—try them in place of tomatoes or other veggies.
- Walnut Pâté
- 1 cup walnut pieces (1/4 Cup)
- 1 1/2 cups cooked cannellini beans or 1 15-oz. can cannellini beans, rinsed and drained (5 Tbsp)
- 2 Tbs. lemon juice (1 1/2 tsp)
- 2 cloves garlic, minced (1/2 tsp)
- 2 tsp. olive oil (1/2 tsp)
- Sandwiches
- 16 slices whole-grain bread (4 Slices or use Pita Pocket)
- 4 large jarred roasted red bell peppers, rinsed, drained, and halved (1 pepper)
- 2 large Anjou, Bartlett, or Concorde pears, peeled and sliced (1/2 of a pear)
- 2 cups baby arugula (1/2 Cup)

- 1 cup dry/uncooked chickpeas (2 & 1/4 cups cooked)
- 3 large garlic cloves
- 1/2 cup red onion, roughly chopped
- 3 tbsp fresh lemon juice
- 1/4 cup lightly packed fresh cilantro
- 1/4 cup lightly packed fresh parsley
- 1/4 cup ground flax
- 1/4 cup breadcrumbs (use GF breadcrumbs for gluten-free)
- 1/2 tsp ground cumin
- 1/4 tsp red pepper flakes, optional
- 1/4-1/2 tsp fine grain sea salt, to taste
