- ½ lb. Blue Cheese
- 1 8 oz. Package of cream cheese
- ½ C. white wine
- ½ C. dry sherry
- 1 tsp. Worcestershire Sauce
- 2 tab. Finely grated raw onion
- Liquid pepper sauce to taste
- Salt to taste
- Combine all, mix well, refrigerate till serving on crackers as a spread.

- 2 dried bay leaves
- 2 small ham hocks (1 1/4 pounds total), with several 1/2-inch slits cut into skin
