- 1 4 - ounce can diced green chile peppers, undrained
- 2 cloves garlic, minced
- 3/4 teaspoon ground cumin
- 1/2 teaspoon dried oregano, crushed
- 1/8 teaspoon salt
- 3 6 - inches corn tortillas
- 1/4 cup shredded Monterey Jack cheese (1 ounce)
- 1/2-1 cup shredded romaine lettuce
- 2 tablespoons snipped fresh cilantro

- 1 cup cornmeal
- 1 cup milk
- 1 tsp sugar
- 1 tsp salt
- 2 3/4 cups boiling water
- 1/2 pound pork sausage -- cooked and drained
- all-purpose flour
- 2 tab butter or margarine
- Combine cornmeal, milk, sugar, and salt. Gradually stir into boiling water; cook and stir till thickened and bubbly. Cook
- covered, over low heat about 10 minutes. Crumble sausage finely; add to cornmeal mixture. Pour into loaf pan. Cover and
- chill. To serve, cut scrapple into 1/3 inch thick slices; dip in flour. Fry slowly in butter or margarine for 15 to 20 minutes
- or till lightly browned, turning once. Serve with butter or margarine and maple syrup, if desired.

- Mushrooms, fresh or canned
- 3 1/2 cups or 2 cans chicken broth 13 3/4 oz each
- 1/4 cup all purpose flour
- 1 (12 oz.) can solid white tuna

- 2 cups frozen peas
- 1 lb. Medium sized pasta shells, freshly cooked and drained.
- Mix broth and flour to combine. Bring boil and reduce heat and simmer 3 minutes. Add mushrooms and simmer uncovered. Drain tuna, add with coarsely chopped parsely. Add peas, Toss with pasta.
