Aunt Lena Sweet Pickles

Bring syrup to a boil and pour over cubed pickles
- 2 quarts dill pickles
- 2 cups vinegar
- 5 cups sugar
Slow Cooker Hoppin John

1. Rinse the peas under cold water and pick out any stones or discolored peas
- Serves 5-6 dinner portions
- 1 Orange or Yellow Bell Pepper, diced
- 1 medium Yellow Onion diced
- 2 celery stalks with tops finely diced
- 1 bunch of Carrots, diced
- 3 Garlic Cloves minced
- 1 Jalapeno pepper, cut in half lengthwise
- 1 1/2 cup Dry Black Eyed Peas
- 32 ounces low salt stock (I use homemade vegetable; chicken would be nice, too)
- 3 Bay Leaves
- 2 teaspoons Old Bay Seasoning
- 1 Sprig Fresh Thyme
- 4-6 servings cooked rice of your choice
- Sharp White Cheddar (I like Dubliner)
- 1 bunch Green Onions
- 1 bunch Collard greens, leaves stripped from stems
- 2-3 tablespoons White Vinegar (optional, but delicious)

Cobb-Salad Sandwich

Spread cranberry sauce on a piece of thinly sliced bread
- 1/4 cup cranberry sauce
- 4 ounces thinly sliced turkey breast
- 2 thin slices rustic bread
- Coarse salt and freshly ground pepper
- 3 slices cooked bacon
- 1 large egg, hardboiled and sliced on an egg slicer
- 1/2 avocado, thinly sliced
- Lettuce
- Basil, for garnish
- 2 tablespoons mayonnaise
Breakfast Grilled Cheese

Mix the cream cheese, cottage cheese and confectioners' sugar in a medium bowl
- 1/3 cup whipped cream cheese
- 1/4 cup small-curd cottage cheese
- 2 tablespoons confectioners' sugar, plus more for topping
- 4 frozen waffles (untoasted)
- 1 to 2 tablespoons jam (any flavor)
- 1 tablespoon unsalted butter, plus more if needed
- Ground cinnamon, for topping
Creamed Green Cabbage

Preheat oven to 350. Bring 1 inch of salted water to a bowl
- Coarse Salt and freshly ground pepper
- 1 sm. head green cabbage, cored and shredded. 10 cups, about 2 1/2 lbs.
- 3 tab. unsalted butter
- 1/4 cup all purpose flour
- 2 cups warm milk
- 1/4 cup mounded finely grated Pecorino Romano cheese (1/2 oz)
- 1 tab. finely grated lemon zest (2 lemons)
Hot Fudge Sundae Cake

Directions: Spray the slow cooker with cooking spray
- Ingredients:
- Cook 1 hr
- Cooking spray
- 1 cup flour
- 1/2 cup plus 1/3 cup granulated sugar
- 1/4 cup plus 5 tablespoons unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 tablespoons mild olive oil
- 1-1/2 teaspoons pure vanilla extract
- 2/3 cup packed light brown sugar
- 1/2 teaspoon espresso powder
- 1-1/2 cups boiling water
- 1 cup heavy cream, chilled
- For a change
- Add a splash of amaretto to the heavy cream before whipping.
Hot and Sour Soup

Directions In a large (5-quart) pot, combine broth, soy sauce, crushed red pepper, and 2 cups water
- 2 cans (14.5 ounces each) reduced-sodium chicken broth
- 2 tablespoons soy sauce
- 1/4 to 1/2 teaspoon crushed red pepper
- 8 ounces fresh shiitake mushrooms (about 4 cups), stemmed, caps thinly sliced
- 3 to 4 tablespoons rice vinegar
- 2 tablespoons cornstarch
- 1 large egg, lightly beaten
- 1/2 package (7 ounces) soft or firm tofu, cut into 1/4-inch cubes, drained
- 2 tablespoons finely grated fresh ginger
- 3 scallions, thinly sliced
Chicken and Cornmeal Dumplings

In a 1 1/2- or 2-quart slow cooker, combine carrots, celery, corn, onion, garlic, rosemary, and 1/4 teaspoon pepper
- 2 medium carrots, thinly sliced
- 1 stalk celery, thinly sliced
- 1/3 cup fresh or frozen corn kernels
- 1/2 of a medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon snipped fresh rosemary or 1/2 teaspoon dried rosemary, crushed
- 1/4 teaspoon ground black pepper
- 2 chicken thighs, skinned
- 1 cup reduced-sodium chicken broth
- 1/2 cup fat-free milk
- 1 tablespoon all-purpose flour
- 1 recipe Cornmeal Dumplings (see recipe below)
- Coarsely ground black pepper (optional)

- Ingredients:
- One 6-oz. can tomato paste
- 1 1/2 tbsp. brown sugar (not packed)
- 1 tbsp. Worcestershire sauce
- 1 tbsp. red wine vinegar
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped bagged broccoli cole slaw
- 1 1/2 lbs. raw extra-lean ground beef (4% fat or less)
- 2 tsp. chopped garlic
- 1 tsp. chili powder
- 1/2 tsp. salt
