Soprano's Sunday Gravy (Spaghetti Sauce)

1. 1 To make the sauce, heat the oil in a large heavy pot over medium heat
- For the Sauce

- 1 * 1 lb meatypork neck bones or 1 lb pork spareribs

- For the Meatballs
- 1 * 1 lb ground beef (or combination of beef or pork)
- 1/2 * 1/2 cup plain breadcrumbs
- 2 * 2 large eggs
- 1 * 1 teaspoon finely minced garlic
- 1/2 * 1/2 cup freshly grated romano cheese or 1/2 cup parmesan cheese
- 2 * 2 tablespoons finely chopped fresh flat-leaf parsley
- 1 * 1 teaspoon salt
- * pepper
- 2 * 2 tablespoons olive oil
Chicken Sausage with Basil and Tomatoe

Combine the meat, salt, pepper, garlic, basil, and tomatoes and toss together until evenly mixed

For the pork: Dry the skin as much as possible with a paper towel

- 1 lb shrimp, peeled and deveined
- 1/4 teaspoon cayenne pepper
- 2 oz unsalted butter (1/2 stick)

- 5 cloves garlic, peeled and minced
- 5 tablespoons white wine
- 6 cherry tomatoes, cut into halves

SLOW COOKER CHICKEN ENCHILADA SOUP

Add all ingredients to a slow cooker, and stir to combine
- 2 boneless skinless chicken breasts (about 1 pound)
- 2 cups good-quality chicken stock
- 1 1/4 cup (or 1 10-ounce can) red enchilada sauce*, homemade or store-bought
- 2 (14-ounce) cans black beans, rinsed and drained
- 1 (14-ounce) can fire-roasted diced tomatoes, with juice
- 1 (15-ounce) can whole-kernel corn**, drained
- 1 (4-ounce) can diced green chiles
