Halibut with Tomatoes and Leeks

Roast the leeks Preheat an oven to 450ºF
- 3 lb. leeks, white and light green portions, halved, rinsed and thinly sliced
- 3 Tbs. olive oil
- Salt and freshly ground pepper, to taste
- 2 cups cherry tomatoes
- 4 halibut fillets, each about 6 oz.
Mushroom and Chicken Hand Pies

For the mushrooms, rub and wipe off any dirt with paper towels
- Puff Pastry:
- 1/2 pound boneless and skinless chicken thighs (cut into 1/2-inch cubes)
- – 1/4 cup carrot (cut into 1/4-inch dices)
- – 4 cremini mushrooms (about 3 1/2 ounces)
- – 1/4 cup frozen peas
- – 1 large garlic clove (minced)
- – 2 tablespoons unsalted butter
- – 1/2 medium onion (cut into small dices)
- – 2 tablespoons flour
- – 1/2 cup low sodium chicken broth
- – 3 tablespoons milk
- – 1/2 teaspoon Dijon mustard
- – olive oil

- – ground black pepper
- – 1 package (17.3 ounces) frozen puff pastry (thawed)
- – all-purpose flour
- – 1 egg
- – water
- – 1/2 tablespoon honey
Chili Basil Shrimp with Edamame Rice

1. Cook the rice according to the directions, set aside and keep warm
- 24 shrimp (peeled and deveined)
- 1 tbsp peanut/olive oil
- 2 tsp chili garlic sauce
- 2 tsp cornstarch
- 1/2 cup chicken broth
- 2 tbsp fresh basil (sliced into thin strips)
- 2 tbsp white vinegar
- 1 1/2 cups of uncooked rice
- 1 cup edamame
- salt & pepper (to taste)
Chile-Braised Pork Shoulder Tacos

Place chiles in a medium bowl
- 4 large dried ancho chiles (about 3/4 oz.), stemmed, seeded
- 2 large dried chiles de árbol or japones chiles, stemmed, seeded
- 2 Tbsp. sugar
- 1 Tbsp. fresh lime juice
- 1 5-lb. boneless pork shoulder (Boston butt)
- Kosher salt
- 2 Tbsp. vegetable oil
- 1 large onion, chopped (about 2 cups)
- 3 large garlic cloves, coarsely chopped
- 2 bay leaves
- 2 tsp. dried oregano, preferably Mexican
- 2 tsp. ground coriander

Slow Cooked Cuban Pork Shoulder

Mince garlic, then mash together with salt, cumin, and oregano using the flat side of a large knife
- 6 large garlic cloves
- 1 tablespoon coarse kosher salt (or 1 1/2 teaspoons fine salt)
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 (3 1/2- to 4-lb) pork shoulder half, with skin
- 1/2 cup lime juice
- 1 cup water
Peanut Butter Brownies

Preheat the oven to 350 degrees F
- For the brownies:
- 1 1/4 cups flour
- 1 teas salt
- 2 tbs cocoa powder
- 11 oz dark chocolate, coarsely chopped
- 1 cup unsalted butter, cut into 1-inch pieces
- 1 teas instant espresso powder
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 5 eggs, at room temperature
- 2 teas vanilla extract
- For the peanut butter:
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1 1/2 cups creamy peanut butter
- 1/2 teas salt
- 1 teas vanilla extract
Kosher Garlic and Dill Pickled Cucumbers

1. In a large jar, place 2 sprigs of dill and 3-4 cloves of garlic
- 3-4 * 3-4 pounds (1 1/2-2 kilo) young and small cucumbers (dark green, firm, warty skin)
- 2-4 * 2-4 sprigs of fresh dill
- 6-8 * 6-8 cloves fresh garlic, peeled and cut in half

- * white vinegar
Caramel Apple Pie

Transfer 1 dough round to a 9-inch deep-dish pie dish and gently press into the dish
- For the apples:
- 2 rolled-out rounds deep-dish piecrust (see related recipe at left)
- 4 lb. Granny Smith apples, peeled, cored and each cut into 8 slices
- 1/2 cup firmly packed light brown sugar
- 1/2 tsp. ground cinnamon

- 1 egg white, beaten with 1 tsp. water
- 2 tsp. granulated sugar

- For the Chocolate Espresso Sauce:
- 8 oz semi-sweet chocolate finely chopped
- 6 oz heavy cream
- 2 oz freshly made hot espresso (can swap 2 oz additional cream for espresso)
- For the Puff Pastry-Wrapped Pears:
- 8 large pears
- 8 cups water
- 4 cups granulated sugar
- 3 cinnamon sticks
- 2 tsp vanilla extract
- 1 small lemon quartered
- 2 sheets frozen puff pastry thawed but still cool
