Steak Sandwich With Caramelized Onion-Jalapeño Sauce

1 Heat oil in large skillet over medium-high heat until just smoking
- 1 tablespoon vegetable oil
- 1 1/2 pounds hanger steak, trimmed
- Salt and pepper
- 2 tablespoons unsalted butter
- 2 medium yellow onions, thinly sliced (about 5 cups)
- 2 fresh jalapeño peppers, thinly sliced (see Notes)
- 2 garlic cloves, thinly sliced
- 1 tablespoon Worcestershire sauce
- 2 teaspoons sugar
- 1/2 cup heavy cream
- 2 teaspoons apple cider vinegar
- 4 sturdy rolls, such as ciabatta, halved lengthwise (see Notes)
- 4 cups loosely packed salad greens (optional)
Pork Medallions in Mushroom Marsala Sauce

Season the medallions with 3/4 teaspoon salt and 1/4 teaspoon black pepper
- 2 (1 lb) pork tenderloins, cut into 1/2-inch thick medallions
- kosher salt and freshly ground black pepper
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons unsalted butter
- 2 medium shallots, finely diced
- 12 oz cremini mushrooms, thinly sliced
- 1 tablespoon all-purpose flour

Kosher Garlic and Dill Pickled Cucumbers

1. In a large jar, place 2 sprigs of dill and 3-4 cloves of garlic
- 3-4 * 3-4 pounds (1 1/2-2 kilo) young and small cucumbers (dark green, firm, warty skin)
- 2-4 * 2-4 sprigs of fresh dill
- 6-8 * 6-8 cloves fresh garlic, peeled and cut in half

Italian Pot Roast

Preheat oven to 275 degrees
- 2 whole Beef Chuck Roasts
- 2 jars Roasted Red Peppers
- 2 jars Artichoke Hearts, Drained
- 6 whole Sundried Tomatoes (jarred)
- 2 whole Yellow Onions, Peeled And Quartered
- 28 ounces, fluid Beef Stock Or Beef Broth
- 2 Tablespoons Parsley Flakes
- 6 cloves Garlic, Peeled
- 1 cup Wine (red Or White)
- 2 Tablespoons Flour
- Salt And Pepper, to taste
- 12 ounces, weight Egg Noodles
- Fresh Parsley, Minced
Blackberry Limeade

- 6 cups water, divided
- 3 cups fresh blackberries
- 3/4 to 1 cup sugar
- 2/3 cup fresh lime juice
- Lime wedges and fresh blackberries, for serving

- 4 cloves garlic, minced
- 1/4 cup flat leaf parsley, chopped
- 4-5 green onion, sliced
- 1 wedge of Brie

Grilled Flank Steak

- 1/3 * 1/3 cup white-wine vinegar
- 3/4 * 3/4 cup olive oil

- 3 * 3 garlic cloves, minced
- 2 * 2 teaspoons salt

- 8 fresh shitake mushrooms (or dried Chinese mushrooms soaked overnight), stems discarded

- 2 tablespoons soy sauce
