Dan Dan Noodles

Bring a large pot of water to boil and cook the noodles according to package instructions
- Sauce:
- 6 ounces ground pork or beef
- 1 tablespoon peanut oil
- 2 teaspoons minced garlic (about 2 cloves)
- 1 teaspoon minced ginger
- 2 scallions, white and green parts chopped
- 2 tablespoons chopped Sichuan preserved vegetable (optional)
- 1 tablespoon Chinese rice wine or dry sherry
- 1/2 teaspoon salt, or salt to taste
- 8 ounces dried Chinese egg noodles
- 1 handful dry-roasted peanuts, finely chopped
- 1/4 cup chicken stock or water
- 2 tablespoons soy sauce
- 1/2 tablespoon Chinese sesame paste or tahini
- 1 tablespoon Chinese black rice vinegar, or substitute good quality balsamic vinegar
- 3 tablespoons chili oil (adjust according to your tolerance of spiciness)
- 2 teaspoons sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon ground Sichuan pepper
Stir Fry Sirloin with Snow Peas

In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger
- 1/2 cup low sodium soy sauce
- 3 tablespoons sherry
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon minced fresh ginger
- 1 1/2 pound sirloin, fat trimmed and sliced very thin
- 2 tablespoons vegetable oil
- 8 ounces fresh snow peas
- 4 scallions, chopped and divided
- 1/4 teaspoon red pepper flakes
Beer Steamed Manila Clams with Bacon and Tomato Recipe

1. Heat a large pot over medium-high heat and add the bacon
- 2 strips bacon, diced
- 1/2 onion, minced
- 1 clove garlic, finely minced
- 1 teaspoon finely minced jalapeno (optional)
- 12 ounces beer (I prefer lager)
- 1 large tomato, chopped
- 2 pound manila clams, scrubbed
- 1/4 lemon
- 1 tablespoon finely minced parsley
- 1 loaf crusty bread
Peppermint Hot Fudge Sauce

Directions: In a double boiler over medium heat stir in cocoa, sugars and salt
- 2 c. unsweetened cocoa powder
- 1 1/2 c. sugar
- 1 c. brown sugar
- 1/4 t. Kosher salt
- 2 c. heavy cream
- 1 c. unsalted butter, cut into pieces
- 2 t. peppermint extract (substitute vanilla, if you don’t want the mint flavor)

- 10 * 10 oz. semisweet chocolate, finely chopped
- 1 1/2 * 1 1/2 cups heavy cream, chilled
