Emeril Lagasse's Rice Pilaf

Pilau and pilaf are first cousins! This dish, which can be rice- or bulghur-based, originated in the Near East
- 1 1/2 tablespoons unsalted butter
- 1/4 pound boiled ham, diced
- 1 1/2 cups finely chopped yellow onions
- 1/2 cup finely chopped celery
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 bay leaves
- 2 cups long-grain white rice
- 1/2 cup finely chopped green onions (green and white parts)
- 1/2 cup seeded and chopped tomatoes
- 2 teaspoons finely chopped garlic
- 1/2 cup frozen peas
- 3 1/2 cups chicken stock or canned low-sodium chicken broth

- (7 to 8-ounce) packages sweetened shredded coconut

- 1 T vegetable oil
- 1-1/2 pounds of boneless skinless chicken breast cut into bite sized peices
- 1 head of freach broccoli chopped
- 3 medium fresh carrots chopped
- 1 T curry powder
- 2 stems of celery
- 1 t instant chicken boulion cube or granules
- 1 cup of light sour cream
- 1 cup of coconut milk

- 1/2 cup Spanish onions, diced
- 1/2 cup fresh carrots, diced

- 2 Tbsp sweet butter
- 6 oz pancetta, diced in 1/4” cubes
- 1/2 lb beef tenderloin, diced in 1/2” cubes
