Crab Rangoon

Step 1: In a bowl cream the cream cheese, soy sauce, green onions and garlic powder
- 12 ounces of cream cheese (at room temperature)
- 50 wan ton wrappers
- 1 cup crab meat (preferably fresh)
- 2 green onions (minced)
- 1/4 teaspoon garlic powder
- 1/2 teaspoon soy sauce
- 1 egg (beaten)
- oil (for frying)
Sweat and sour sauce Chinese

Method Place all of the above ingredients together in a saucepan
- Pineapple sweet and sour sauce
- Ingredients
- Juice from a 4 oz can of pineapple chunks or rings
- 1/4 cup of tomato ketchup
- 1/4 cup of distilled white vinegar
- 1/4 cup of brown sugar
- 11/2 tbsp of cornstarch
- 1 tbsp of Worcestershire sauce
- 1/2 tsp of garlic powder
- 1/4 tsp of mustard powder
- 1/2 tsp of ground ginger
Pad Thai Shrimp Rice Noodles

To make Pad Thai Sauce: 5 C
- Single Serving Ingredient List:
- 3/8 C. Pad Thai Sauce (See sauce mix below)
- 4 oz. Shrimp, shelled & de-veined, marinated
- 6 oz. Rice sticks (re-hydrated) (2 C.)
- 1 oz. Red onions, sliced 1/4" (1/4 C.)
- 1 oz. Thai basil, sliced (or sweet basil)
- 3 oz. Bean sprouts, fresh (2 C.)
- 1 oz. Green onions, slant cut 2"
- 1 Tbsp. Peanut, roasted, crushed
- 1 Tbsp. Cilantro, chopped
- .6 oz. Corn oil (2 Tbsp.)
- Garnish with lime wedge

- 4 fresh mint leaves, slightly mashed
- juice of half a squeezed lime
- 1 oz. Bacardi Superior
- 1 oz. of mango puree (peel and dice fresh mango; puree in blender
- 2 oz. club soda

Best soft tacos ever
- active time 20 mins from start to finish is 2 hours. yeilds 26 to 32 tacos.
- 4 pounds of fatty pork butt or shoulder cut into 2 inch slices
- 2 ounces of pork lard or vegetable oil
- 3 cups of water
- 1/2 orange cut into 2 pieces
- 1 medium white onin thinly sliced
- 3 garlic cloves peeled
- 2 Tablespoons of dried oregano
- 2 teaspoons of fine salt
- 3 bay leaves
- 1 tablesppon of sweetend condenced milk
Deviled Eggs Extraordinaire

I wanted to try another version of the classic deviled egg, and this one makes your mouth sing
- Garnish:
- 24 eggs, hard-cooked and peeled
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 2 tablespoons prepared mustard
- 1 teaspoon cider vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- scallions, ground black pepper and paprika

In a large mixing bowl, beat shortning up till light and fluffy
- 2/3 cup of shortning
- 2 eggs
- 3/4 cup of maple syrup
- 1/2 cup milk
- 1-1/2 cup all purpose flour
- 1-1/4 t salt
- 1/2 t baking soda
- 1/2 t ground ginger
- 1/2 t ground all spice
- 1 cup of canned pumpkin
- 1 can crushed pineapple drained
- 1 package (8 oz.) cream cheese softened
- 1/4 cup butter softened
- 1-1/2 cup confectioners sugar

Puerto Rican Rice Mellisa's recipe

In a large skillet add oil, seasonings, tomato sauce garlic and sofrito sauce
- 4 - 5 cups of cooked white rice
- 1/2 T olive oil
- 1 can of pigean peas drained
- 1 can od tomato sauce
- 1/2 can of stewed tomatos
- 1 heaping T of minced garlic
- 1 packet of Sazon Goya seasoning
- 2 heaping T of Sofrito Sauce (check my recipes to learn how to make sorito sauce)
- 1 cup of water
