Creamy Cheesecake (Reg or Low Carb)

Can be made Low Carb * Use Walnut Crust instead of graham cracker crust
- Filling:
- Crust
- 1 1/4 cups Graham Cracker Crust *
- 3 Tbsp Butter melted
- 1/4 cup Splenda
- Mix together & press into 10" spring form pan
- 1 lb. regular cream cheese
- 1 lb fat free cream cheese
- 1 1/4 cup Splenda
- 1 1/2 tbsp lime juice
- pinch of salt
- 4 large eggs
Summer Salad

Mix and let sit 3 hours
- 2 cans black eyed peas (unseasoned)
- or 1 can black eyed peas and 1 can black beans (drained)
- 1 can Hominy (unseasoned)
- 4 green onions chopped
- 1 red pepper chopped
- 1 medium onion chopped
- 1 8oz Seven Seasons Viva Italian Dressing
- 1 20 oz pace picante mild (drained)
- or use 7 oz of dressing & 16 oz Pace so it's not so runny
- 1/2 cup cilantro chopped
- 4 cloves minced garlic
Mexican Caviar

Bring 1st 3 ingredients to a boil and cool
- 1/2 c.sugar
- 1/2 c. vinegar
- 1/2 c. oil
- 1 red pepper diced
- 1 green pepper diced
- 1 bunch green onions
- 1 small jar/can jalapenos
- 1 can pinto beans
- 1 can corn (drained)
- 1 can black beans (drained)
Onion Crusted Chicken

Pound chicken breasts to about 1/4" thickness
- 6 chicken breasts, thawed
- 1/2 tsp pepper
- 1/2 cup margarine melted
- 1 tbsp Worcestershire sauce
- 1 tsp dry mustard
- 1 2.5 oz can fried (Durkee) onions crushed
Carrot Cupcake

Preheat oven to 350°F. Line 24 cupcake molds with papers, or butter and flour them
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 2 cups sugar
- 1 1/4 cups canola oil
- 4 large eggs
- 3 cups grated peeled carrots
- 1 cups coarsely chopped walnuts (optional)
- 1/2 cup raisins (optional)
Fat Burning Cabbage Soup

Cut vegetables into medium pieces
- 1 or 2 cans crushed tomatoes
- 6 large green onions
- 1 large can beef broth
- 1 package Lipton Onion Soup Mix
- 1 head cabbage, chopped
- 2 cans green beans
- 2 green peppers
- 2 lbs carrots
- 1 lunch celery
Coleslaw (KFC style)

- Shred 1 large head cabbage
- 1 onion chopped (opt)
- 1 or 2 shredded carrots
- 1 cup sour cream
- 1/2 cup sugar
- 3 tbsp vinegar
- 1/2 cup mayo
- 1 tsp salt
- Pepper
Beer Batter for Deep Fry Fish

- 2 cups Flour
- 1 can beer
- 3 eggs (separated)
- 1/2 tsp baking powder

- 1 bottle salad supreme
- 1 cucumber chopped
- 1 bunch green onions chopped
- 1 small can black olives
- 1 bottle Seven Seas Zesty Italian Dressing (or Green Goddess)
Taffy Apple Salad

- 8 oz cream cheese
- 20 oz can crushed pineapple
- 3 cups coarsely chopped apples
- 2 cups mini marshmellows
- 8 oz cool whip
- 1 1/2 cups peanuts
