- SAUCE:
- 2 cans crushed tomatoes

- minced garlic
- minced dried onions
- dried herbs, salt, and pepper to taste
- FILLING:
- 1 head of broccoli
- 3 medium zucchini (about 2" round by 7-8" long)
- 1 large block of soft tofu (firm or extra firm work fine, too)
- Seasonings to taste (I add garlic salt, black pepper, and cayenne pepper)
- LAYERING:
- Barilla flat lasagna noodles (12)
- 2 bags of shredded mozzarella flavor vegan cheese

Combine all ingredients, except olive oil, in a bowl and mix thoroughly
- 1 large zucchni grated, excess water removed (Note: To do this, after you grate the zucchini, put the grated zucchini into paper towels and squeeze to release the water)
- 1/2 cup freshly grated Parmesan cheese
- 1 cup panko bread crumbs
- sprinkle of ground nutmeg, about 1/8 teaspoon (Note: If you add too much it can quickly take over the taste, less is more)
- 1/4 teaspoon paprika
- 1 clove garlic, minced
- 1 egg
- salt and pepper to taste
- 1-2 tablespoons olive oil

- 1.5 pounds (675 grams) ground chicken, turkey or beef
- 1/2 teaspoon (2 grams) each salt and pepper
- 1 tablespoon (6 grams) fresh thyme leaves or 1.5 teaspoons (3 grams) dried
- 1/4 cup (60 grams) tomato paste
- 1 – 2 teaspoons (5 – 10 mL) Worcestershire sauce (to taste)
- 1/4 cup (65 mL) water
- 1 cup (135 grams) frozen corn niblets
- For the potatoes
- 4 medium potatoes
- 3 tablespoons (42 grams) butter
- 1/2 cup (125 ml) milk
- 1/8 teaspoon (.5 gram) grated nutmeg
- 1/4 cup (25 grams) grated Parmesan

- 1/2 1/2 3/4 cup organic white cane sugar 3/4 cup very hot strong coffee (or use espresso powder in very hot water)
- 2 2 2 sticks unsalted butter, room temperature, cut into pieces
- 2 2 2 tablespoons unsweetened organic cocoa powder
- 8 8 8 large organic free-range eggs, at room temperature
- 1 1 1 tablespoon bourbon vanilla extract- yes, a tablespoon!
