- 5 Tablespoons maple syrup

* Heat oven to 425 deg * Combine dry mix, oil and water in large bowl and mix until smooth

- cornmeal
- brown rice flour
- white rice flour
- baking powder

- xanthan gum
- baking soda

- 2 c water
- 2-4 TB sugar/sweetener

- 1 cup chopped onion
- 1/4 cup chopped celery
- 1/3 carton (10 oz) Imagine® Natural Creamy Portobello Mushroom Soup
- 1/4 cup SOY DREAM® Enriched Original
- 1 Tablespoon dried parsley
- 1/4 teaspoon pepper
- 1 can (15 oz) soybeans, rinsed, drained & ground
- 2 cups dry macaroni, cooked
- 4 ounces cheddar-style soy cheese, grated

Banana Cookies Recipe

1 Preheat the oven to 350F
- 1/2 * 1/2 cup of olive oil
- 1 * 1 cup of sugar
- 1 * 1 egg, room temperature
- 1 * 1 cup of mashed bananas (about 2 large bananas)
- 1 * 1 teaspoon of baking soda
- 2 * 2 cups of flour (if gluten-free, add 1/2 tsp baking powder)
- * pinch of salt
- 1/2 * 1/2 teaspoon of ground cinnamon
- 1/2 * 1/2 teaspoon of ground mace or nutmeg
- 1/2 * 1/2 teaspoon of ground cloves
- 1 * 1 cup of pecans (walnuts and chocolate chips are fine alternatives)
Eggplant and peppers with feta

Place the eggplant slices on a wire rack and sprinkle them lightly with salt on both sides
- 2 large eggplants, ends trimmed, sliced into 1/3-inch-thick rounds
- Salt
- 1 each red, yellow, green, and orange bell pepper, cored, seeded, and sliced lengthwise into 8 pieces
- 1/3 cup olive oil
- Kosher salt and freshly ground black pepper
- 1/3 cup feta cheese, crumbled (3 ounces)
- 1 tablespoon minced fresh marjoram, oregano, or basil, or a combination

In a Dutch oven, cook the potatoes, carrots and celery in water until tender, about 15-20 minutes
- 6 medium potatoes, peeled and sliced
