Meat Lovers Deep Dish Pizza

1. Heat oven to 450 degrees F
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1/2 pound sweet or hot Italian pork sausage
- 1/2 teaspoon dried Italian seasoning
- 1 pound pizza dough, at room temperature, or one batch Basic Pizza Dough (see below)
- 2 cups shredded mozzarella cheese
- 1/2 green pepper, seeded and thinly sliced
- 1 cup marinara sauce
- 2 tablespoons grated Parmesan cheese
Pork Stir-Fry with Noodles (Lo Mein)

1. Bring 4 quarts water to boil in Dutch oven over high heat
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons hoisin sauce (see note)
- 1 tablespoon toasted sesame oil
- 1/4 teaspoon five-spice powder
- 1 pound boneless country-style pork ribs, trimmed of surface fat and excess gristle and sliced crosswise into 1/8-inch pieces (see note)
- 1/4 teaspoon liquid smoke (optional)
- 1/2 cup low-sodium chicken broth
- 1 teaspoon cornstarch
- 2 medium garlic cloves, minced or pressed through a garlic press (about 2 teaspoons)
- 2 teaspoons grated fresh ginger
- 4 1/2 teaspoons vegetable oil
- 4 tablespoons Chinese rice cooking wine (Shao-Xing) or dry sherry (see note)
- 1/2 pound shiitake mushrooms, stems trimmed, caps cut in halves or thirds (about 3 cups)
- 2 bunches scallions, whites thinly sliced and greens cut into 1-inch pieces (about 2 cups)
- 1 small head Napa or Chinese cabbage, halved, cored, and sliced crosswise into 1/2-inch strips (about 4 cups)
- 12 ounces Chinese egg noodles (fresh) or 8 ounces dried linguine (see note)
- 1 tablespoon Asian chile garlic sauce
Cheese-Stuffed Chicken Cutlets with Mustard Sauce

- Four 6-ounce chicken cutlets, about 1/2 inch thick
- 4 thin slices of plain havarti cheese
- 4 teaspoons chopped thyme
- 1/2 cup chicken stock
- 1/4 cup heavy cream
- 1 tablespoon plus 1 teaspoon Dijon mustard
- Salt and freshly ground pepper
- 2 large eggs
- 2 tablespoons freshly grated Parmigiano-Reggiano cheese
- All-purpose flour, for dredging
- Extra-virgin olive oil, for frying

- 1/2 cup milk
- 2 1/2 cups cooked white rice or wild rice
- 2 cups cubed cooked chicken
- 1 cup frozen peas
- 1/3 cup chopped bottled roasted red sweet peppers
- 1/4 cup slivered almonds, toasted (optional)
- 1 tablespoon snipped fresh basil or 1/2 tsp. dried basil, crushed

1. In a large bowl, toss together pork, 1/4 cup oil, vinegar, 2 tbsp
- 1 1/2 lb. trimmed pork loin, cut into 1 1/4″ cubes

- 1/4 cup white wine vinegar
- 5 tbsp. finely chopped mint
- 5 tbsp. finely chopped parsley
- 2 tbsp. finely chopped oregano
- 1 tsp. fresh lemon juice
- 1 bay leaf, finely crushed
- Kosher salt and freshly ground black pepper, to taste
- 1 1/2 tsp. crushed red chile flakes

BLT Potato Salad

- 3 large baking potatoes (about 3 1/2 pounds), peeled and chopped
- 1 cup mayonnaise
- 3 tablespoons sweet pickle relish
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped fresh parsley
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground pepper
- 1 cup grape tomatoes, halved
- 3 green onions, sliced
- 2 hard-cooked eggs, chopped
- 4 bacon slices, cooked and crumbled

Instructions Toss the diced tomatoes, red onion, jalapeno, cilantro, and garlic together
- 5 Roma tomatoes, seeded and diced finely
- 1/2 large red onion, diced finely
- 1 jalapeno, seeded and chopped finely (use 1/2 a jalapeno if you don't want it as spicy)
- 1/2 bunch of cilantro, chopped finely (if your bunch is small use a whole bunch)
- 3 garlic cloves, minced
- 1/2 lime, juiced

Preheat oven to 350°F. Add potatoes to a large stock pot, cover with water, and bring to a boil
- 3 pounds russet potatoes, peeled and cubed
- 8 ounces sour cream (or Greek yogurt)
- 1/2 cup whole or 2% milk, plus more as needed
- 8 ounces sharp cheddar cheese, grated (about 2 1/2 cups)
- 2 large shallots, minced (about 1/2 cup)
- 2 teaspoons kosher salt
- Freshly ground black pepper, to taste
- 1/4 cup grated Parmesan cheese

- 2 yellow onions, minced, divided
- 2 tablespoons chili powder
