- 6 ounces sliced bacon, cut into 1/2-inch pieces
- 1/2 medium onion, halved crosswise and thinly sliced

Make the tomato sauce first so it will be ready when you need it
- for the simple tomato sauce:
- A splash olive oil
- 1 large onion, minced
- 1 whole head garlic cloves, peeled
- 1 28 ounce can whole tomatoes
- 1 teaspoon dried oregano
- 1 bay leaf
- a sprinkle or two sea salt and freshly ground pepper
- for the meatballs:
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 pound ground beef
- 1 onion, peeled and grated
- 2 cloves garlic, finely minced
- 1/2 cup grated Parmesan cheese
- 1 egg
- a bunch chopped parsley
- 1/2 teaspoon ground nutmeg
- 1 tablespoon dried oregano
- a sprinkle or two sea salt and freshly ground pepper
- a few splashes olive oil
