Chicken Caesar Salad Wraps

In a large bowl, whisk together the mayo, parmesan, lemon juice, worcestershire, dijon mustard, and garlic
- 1/4 cup light mayo (I like the kind with olive oil)
- 1/4 cup parmesan cheese
- 2 tablespoons fresh lemon juice
- 1 tablespoon worcestershire sauce
- 1 tablespoon dijon mustard
- 1 garlic clove, finely minced
- 1/4 cup olive oil
- 3 cups cooked shredded chicken (rotisserie works great)
- 1 romaine heart, torn into bite size pieces (I used romaine salad mix)
- 4 large tortillas or wraps (whole wheat would be awesome)
Caramel Chicken

Heat oil in a large wide heavy pot over medium-high heat
- 2 tablespoons vegetable oil
- 2 1/2 pounds skin-on, bone-in chicken legs and thighs
- Kosher salt
- 8 garlic cloves, peeled

- 3 ounces Monterey Jack cheese, grated on small holes of box grater (about 1 cup)

- 1/2 cup low-sodium chicken broth

- 1/2 teaspoon unflavored gelatin (powdered)
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- 2/3 cup crushed saltine crackers
- 2 tablespoons minced fresh parsley leaves
- 3/4 teaspoon table salt
- 1/2 teaspoon ground black pepper
- 1 pound ground sirloin

- 1/2 cup ketchup
