- 1 Lb. Lean Ground Chuck OR Ground Turkey
- 1-2 Green Onions - chopped
- 1 Cup Celery - diagonally sliced
- 1 can Water Chestnuts, sliced
- 1 Green Pepper, cut into bite-size pieces
- Salt and Pepper, to taste
- 1-2 TBSP Soy Sauce - Low Sodium
- 1 Lb. Fresh Bean Sprouts ( or 1 can, but fresh tastes best)
Cranberry Relish

- 3 Lbs Cranberries ~ fresh
- 5 Oranges ~ peeled
- 5 Apples ~ cored
- 1 ) 20 oz can Pineapple ~ crushed & undrained
- 3 C. Sugar
Broccoli, Ham, and Mozzarella Baked with Eggs

- 4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well.
- 1-2 cups diced ham (1/2 - 1 lb.)
- 1 cup low-fat grated Mozzarella
- 1/3 cup thinly sliced green onion (optional, but good)
- 8-10 eggs, well beaten
- Spike Seasoning (or other all-purpose seasoning blend) to taste (I use about 1 tsp.)
- fresh-ground black pepper, to taste
- low-fat sour cream, for serving (optional)
Tuna Rice Platter

- 16 oz OR 2 Cups Mixed Vegetables - Frozen, Canned or Dehydrated
- 1 (9.25 oz) can Tuna in water (drained)

- 1/2 Cup Fat-Free liquid Egg substitute
- 1/4 Cup shredded fat-free Mozzarella cheese
- 1/2 Cup Tomato - chopped
- 2 TBSP Green Pepper - chopped
- 2 TBSP - Mushrooms - chopped
- Optional: salt, black pepper, oregano, garlic/garlic powder, onion powder, red pepper flakes
Cafe Latte Caramel Macchiato - S

- For the latte syrup
- Don't be afraid to make a sugar free syrup all you have to do is heat water and whisk, whisk, whisk!
- 1 cup VERY hot water
- 1/2 cup Gentle Sweet Sweetener (or 1/4 cup Pyure or Truvia still good but not quite as sugary tasting)
- 1/8 teaspoon xanthan gum (serves as a binder and this syrup will not separate at all)
- 1 teaspoon vanilla extract (I use a high quality organic to insure a clean flavor)
- 1/4 teaspoon caramel flavoring (I use Watkins and get it at Wal-mart - The key is keeping the amount of caramel flavoring very small here.)
- For the latte
- 1 cup cold brewed coffee
- 3/4 cup unsweetened original almond milk (I love blue diamond)
- 1 1/2 tablespoon collagen protein
- 1/4 cup half and half (or to lower carbs you can use 2 tablespoons or more heavy cream)
- 1/4 cup caramel latte syrup

- 1 Cup Butter or Margarine, softened
- 1.5 Cups Brown Sugar, packed
- 2 Eggs
- 2 tsp Vanilla Extract
- 2.75 Cups All-Purpose Flour
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1.5 Cups Semisweet Chocolate Chips
- 1 Cup English Toffee Bits
- 1 Cup Pecans, chopped
- Note: I added less nuts and 1/2 C White Chocolate Chips
Simple Pear Dessert

- 1/4 C light Brown Sugar
- 2 TBSP Walnuts-chopped

- 1 Green Bell Pepper - diced
- 3/4 tsp Salt
- 1/2 tsp ground Ginger
- 1/4 tsp Nutmeg
- 1/4 tsp Cardamom
- 1/4 tsp Black Pepper
- 1.5 Cups Water or Fat Free Beef Broth
- 2 lbs fresh Pumpkin, peeled and cut into 3 inch chunks
