Stuffed Mushroom Appetizer

- 2 packages button mushrooms - fresh
- 1 ) 8 oz Cream Cheese - softened
- 1 ) 8 oz Parmesan Cheese - shredded
- Minced Garlic, to taste (approx 2 TBSP)
- Salt and Pepper (dash or 2 of each)
- 1/4 Cup Butter - melted
Pheasant with Wild Rice

Heat mushroom soup and milk
- 2 cups cooked Wild Rice
- 1 Onion, finely chopped
- 1 cup fresh Parsley, finely chopped
- 1 can Cr. of Mushroom Soup
- 1/2 soup can of Milk
- 1 cup Cheddar Cheese-shredded
- 2 Pheasants, cut into pieces
- flour
- shortening
- paprika
Beef Enchiladas

2008 Taste of Home Annual Cookbook - Freezer Meal makes 2 meals for 5 people each meal
- 2 1/2 lbs Ground Chuck
- 2/3 C. Onion - chopped
- 2 ) 15 oz cans Enchilada Sauce
- 1 can Cr. of Mushroom Soup, undiluted
- 1 can Tomato Soup, undiluted
- 20 ) 8 inch Flour Tortillas-room temp
- 2 1/2 C. Shredded Cheddar Cheese
- extra shredded cheese
Pear Tart

This is a special dessert when pears are in season
- 1/2 Cup Butter ( 1 stick ) softened, unsalted butter, plus more for greasing pan
- Juice of 1/2 Lemon, divided
- 1 lb Pears ( Concorde, Barlett or d'Anjou) cored and sliced 1/2 inch thick
- 1 Cup All-Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 Cup plus 2 TBSP Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/2 to 3/4 tsp Cinnamon
Sugar Cookie Glaze Frosting

This is the BEST icing for sugar cookies
- 1 cup powder sugar
- 1 tbsp milk
- 1 tbsp light corn syrup
- 1-3 drops lemon juice (optional)

Weight Watchers excellent accompaniment - Green Salad with Strawberries and Pomegranate Dressing
- 3 ) 14 oz cans Fat-Free, Low Sodium Chicken Broth
- 1.5 TBSP Chopped fresh Basil
- 1 tsp minced Garlic
- 1 ) 9 oz package fresh Cheese Tortellini
- 2 Cups fresh Baby Spinach
- 1 Cup Chopped Tomato
- 1/2 Cup sliced Green Onions (about 3 onions)
- 1/4 Cup (1 oz) Shredded Parmesan Cheese
CHOCOLATE SYRUP

- CHOCOLATE SYRUP
- 3 tablespoons butter
- 2/3 cup cocoa
- 1/2 cup heavy cream
- 1/2 cup water
- Dash salt
- 1 cup plus 1 tablespoon granular Splenda or equivalent liquid Splenda
- 1 teaspoon vanilla
