Fajita-rific Beef Stew

It's like an underwater platter of steak 'n veggie fajitas! Except the water is actually a yummy seasoned beef brot...
- 12 oz. raw lean beef filet, thinly sliced into bite-sized strips
- 2 tbsp. (about half of a 1-oz. packet) dry fajita seasoning, divided
- One 14.5-oz. can diced tomatoes with chilies (not drained)
- 1 large russet potato (about 13 oz.), peeled and cubed
- 1 large onion, thinly sliced into bite-sized strips
- 2 bell peppers, seeded, thinly sliced into bite-sized strips
- 2 portabella mushrooms, sliced into bite-sized strips
- 4 cups (32 oz.) reduced-sodium fat-free beef broth
- 1 tsp. chopped garlic
- 2 tbsp. cornstarch
- Optional topping: chopped fresh cilantro
Sugar Cookie Cutouts

Here's a low-calorie, lower-fat version of traditional sugar cookie dough
- 1/4 cup butter, softened
- 1/2 cup sugar or sugar substitute-sugar blend* equivalent to 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup canola oil
- 1/4 cup refrigerated or frozen egg product, thawed, or 1 egg
- 1 teaspoon vanilla
- 2 1/2 cups sifted cake flour
Peanut Butter Cookies - Flourless

Heat oven to 350. Line 2 baking sheets with parchment
- Optional:
- 2 Cups Creamy Peanut Butter
- 1 Cup Brown Sugar - packed
- 1 Cup White Sugar
- 2 Eggs - large
- 2 tsp Baking Soda
- 1.2 tsp Kosher Salt
- 1 Cup Pretzel pieces - broken

- 1 Tablespoon Fresh Lemon Juice
- 1/4 teaspoons Salt
- 1/4 teaspoons Baking Powder
- 1/8 teaspoons Baking Soda
- 1-1/2 cup All-purpose Flour
- 1/2 cups Powdered Sugar
CAULIFLOWER HASH BROWNS - THM S

- 12 ounces fresh cauliflower, grated, about 1/2 medium head
- 4 slices bacon, chopped
- 3 ounces onion, chopped, about 1/2 cup
- 1-2 tablespoons butter, optional
- Salt and pepper, to taste
- If you make this with 1 ounce onion, the carb count would be 3 net carbs per serving.
Maple Spiced Nuts
