Honungsglacerad fläskkarré med katrinplommonsås

Det här är en variant på klasssisk plommonspäckad karré
- Katrinplommongräddsås:
- 1 kg fläskkarré, putsad
- 1/2 msk salt
- 1 tsk mald vitpeppar
- 1 tsk mald torkad ingefära
- 10 katrinplommon
- 1 stor gul lök
- 1 dl oekat fruktigt vitt vin
- 1 msk konc kycklingfond
- 3 dl matlagningsgrädde eller creme fraiche
- 2 tsk ljus soja
- Honungslaze:
- 1/2 dl flytande honung
- 2 tsk konc kalvfond
- 1 msk rosmarin
- 1/2 dl vatten
- 1 stor klyfta vitlök, pressad
- 2 tsk ljus soja

- 2 carrots, thinly sliced
- 150 g mushrooms, sliced
- 200 g noodles made from sweet potato starch (dang myun)
- 1 yellow onion, thinly sliced
- 100 g snow peas, sliced
- 200 g beef, in thin strips
- cooking oil
- 2 tbsp japanese soy sauce
- 1 tbsp sugar
- salt
- black pepper
Braised Spring Greens

Heat the olive oil in a large frying pan until shimmery
- 1 tbsp olive oil
- 2 large garlic cloves, chopped
- 500 g fresh spring greens, cleaned, trimmed & chopped
- 250 ml chicken stock
- 1 tbsp vinegar - balsamic, cider... try different
- 2 tsp sugar
- salt & chilli flakes to taste
Grytstek på vild eller tam gris på italienskt vis

Grytkött stod det på förpackningen med ett bastant stycke vildsvin
- Smaksättare:
- 1 kg grytkött av vildsvin i stycke
- 1/2 msk salt
- 2 gula lökar
- 2 msk smör
- 2 msk olivolja
- 1 tsk socker
- 4 enbär, krossade
- 2 hela vitlöksklyftor
- 1 lagerblad
- 1 burk körsbärstomater
- 1 tsk konc kalvfond
- 1 liten klyfta vitlök, pressad
- 1 lagerblad, finsmulat
- 1/2 msk repad hackad rosmarin eller 1/3 tsk torkad
- 2 msk madeira, rött portvin eller Pedro Ximenes-sherry
- svartpeppar, salt
- Till servering:
- Rostade rotsaker
- Broccoli eller gröna bönor
Indisk lammfärsbiffar, bönröra och yoghurtsås

- Lammfärsbiffar:
- 900 g lammfärs
- 6 finhackade vitlöksklyftor
- 2 1/2 msk färsk finhackad ingefära
- saften av 1 1/2citron
- 1 msk salt
- 2 tsk starkt paprikapulver
- 1 1/2 tsk chilipulver, gärna ancho
- 3 msk spiskummin
- 1 tsk mald koriander
- 1 tsk garam masala
- 2 msk smör + 2 msk olja
- Yoghurt med mynta och chili:
- 3 dl tjock yoghurt (10 %)
- 2 tsk torkad mynta eller 1 cirka msk finhackad färsk mynta
- 1 tsk finhackad chili
- salt efter smak
- Bönröra:
- 1 burk matevete
- 1 burk kikärter
- 1 burk kidneybönör
- 1/2 dl matolja
- 1 kanelstång
- 5 kryddnejlikor
- 5 kardemummakapslar
- salt efter smak
Sticky streaky strips

Oven 180C. Mix together sugar, vinegar, treacle, tomato pure and mustard
- 1 tbsp light muscavado sugar
- 1 tbsp red wine vinegar
- 1 tbsp black treacle
- 1 tbsp tomato pure
- 1 tsp Dijon mustard
- 4 large thick pork belly rashes, skin removed
- 1 tbsp water
- 1 can baked beans in tomato sauce
Hazelnut Rugelach

- For the pastry:
- 200 g butter, softened
- 200 g full-fat Philadelphia cream cheese, softened
- 2 tsp caster sugar
- 150 g all-purpose/plain flour, sifted
- a pinch of salt
- For the filling:
- 100 g finely ground hazelnuts or walnuts
- 50 g soft brown sugar
- 5 Tbsp unsweetened cocoa powder
- 2 tsp cinnamon
- For brushing:
- 25 g butter, melted
- For glazing:
- 1 egg white, beaten with a little water
Balsamic beef, asparagus & Pecorino salad

Mix the marinade, add the meat and leave for 1 hour, turning once
- Marinade:
- 250 g sirloin steak, ca 5cm thick
- 200 g asparagus
- 100 g sugar snap peas
- 1 ripe avocado
- juice of 1/2 lemon
- 1 tbsp olive oil
- 1 small red onion, thinly sliced
- 1 bunch of watercress
- 25 g Pecorino, shaved
- 3 tbsp olive oil
- 4 tbsp balsamic vinegar
- pinch of chilli flakes or 1 tsp chilli oil
Beans with tomato, coriander and coconut milk

There is no real reason why you shouldn't use any beans you wish here
- 400 g dried haricot beans
- 2 medium-sized onions
- 2 tbsp vegetable or groundnut oil
- 3 cloves of garlic
- 8 green cardamoms
- 2 tsp coriander seeds
- 1 tsp yellow mustard seed
- 1 tsp cumin seeds
- 2 tsp ground turmeric
- 3 small hot chillies
- 2 x 400 g cans chopped plum tomatoes
- a pinch of sugar
- 250 ml coconut milk
- a large handful of fresh coriander
- the juice of 2 limes
Smoked mackerel salad

Mix all the ingredients for the dressing and whisk lightly
- Dressing:
- 600 g smoked makrell
- 4 boiled eggs, halved
- 1/2 cucumber, diced
- 1 bunch dill
- 100 g baby spinach
- 1 red onion, finely sliced
- 100 ml crème fraîche
- 2 tbsp water
- 1 tbsp grated horseradish
- salt & black pepper
