Yellow split peas with spiced butter

An endlessly useful dish, both as a side dish (for grilled chicken, say) or for eating with rice as a main dish
- to finish:
- 200 g yellow split peas
- 1 tsp ground turmeric
- 800 ml water
- a thick slice of butter
- 1 tsp cumin seed
- 1 heaped tbsp finely chopped ginger
- 1 tbsp lime juice
- 2 small hot green chillies
- chopped coriander
Chiliglaserad kotlett med stjärnanisky och myntakräm

1 Börja med krämen: Dela gurkan på längden, kärna ur och skär i tunna skivor
- Glaze:
- 4 st benfria fläskkotletter, 1.5 centimeter tjocka
- salt och svartpeppar
- 2 msk oystersås
- 1 msk sambal oelek + pressad lime
- Sås:
- 2 dl rött portvin
- 2 st stjärnanis
- 1 st schalottenlökar, finhackade
- 1 tsk riven färsk ingefära
- 1 krm alt. ingefära, malen
- 1 st oxbuljongtärning
- 2 dl vatten
- Myntakräm:
- 1 krm salt
- 2 dl grekisk yoghurt (8 %)
- 5 st myntablad, strimlade
- svartpeppar
- Couscous:
- 4 st couscousportioner
- 1 st grönsaksbuljongtärning
- 1 st gurka, urkärnad och hackad
- 4 st tomater, hackade
- pressad citron
The Bread, In His Words

I combined these ingredients all together in the KitchenAid stand mixer with the dough hook (it can be done by hand...
- 20 oz. of bread flour (all purpose is okay, too) - about 4 cups.
- 8 oz. of water (or 1 cup.)
- 4 oz. melted butter with chopped herbs of choice. We had chives. Rosemary or Thyme would work really well.
- 2 teaspoons salt
- 1 teaspoon active or instant yeast. (if active, it would be best to sprinkle yeast over the water to let it start to work before mixing it in)
Pork Burritos

Heat the oven to 180C. In a oven-safe casserole with lid, heat the oil and seal the pork all over
- Pickle:
- 300 ml orange juice
- 1 tbsp Tabasco sauce
- 200 ml white vine vinegar
- 3 garlic cloves, crushed
- 1 tbsp dried oregano
- 1/2 tbsp cumin seeds
- 1-2 tbsp veg oil
- 750 g pork belly, skinned and boned
- 150 ml Newcastle Brown Ale or similar
- 8 flour tortillas
- fresh coriander
- 50 g caster sugar
- 100 ml rice wine vinegar
- 2 red onions, finely sliced

- 1 tbs Shaoxing rice wine or dry sherry
- 1 tbs light soy sauce
- 2 tsp sesame oil
- 1 tsp cornflour
- 11/2 tbs peanut oil
- 11/2 tbs black beans, rinsed and coarsely chopped
- 1 tbs garlic, finely chopped
- 3 tbs spring onions, finely chopped
- 1 tbs chopped shallots

- for the pastry:
- 140 g butter
- 230 g plain flour
- 50 g icing sugar
- 1 large egg yolk
- for the filling:
- 250 g blackberries
- 4 large figs
- 4 tbsp redcurrant jelly, melted
- juice of 1/2 a lemon
- 60 g ground hazelnuts
- a little icing sugar
