Mango and coconut rice salad

Consider yourself lucky - you've actually got two recipes here
- 100 g jasmine (or basmati) rice
- 1 tsp unsalted butter
- Salt
- 130 ml water
- 20 g Thai basil
- 150 g Camargue red rice
- 1 red pepper, cored and thinly sliced
- 10 g mint leaves, roughly chopped
- 10 g coriander leaves,
- roughly chopped
- 2 spring onions, thinly sliced
- 1 red chilli, deseeded and finely chopped
- Grated zest of 1 lemon, and possibly some of the juice
- 1 large mango or 2 smaller ones, cut roughly into 2cm dice
- 60 g roasted salted peanuts, broken roughly
- 50 g flaked coconut
- 2 tbsp groundnut oil
- 25 g deep-fried sliced shallots, homemade or bought in (optional)
Warm Carrot Salad

Boil carrots whole in lightly salted water until just tender
- 1.5 kg carrots, peeled
- 1 large garlic clove, peeled
- 2 tsp cumin seeds, toasted
- 1 tsp honey
- juice of 1 lemon
- small handful of raisins
- small handful of pine nuts, toasted
- 2 tbsp olive oil
- 1 bunch coriander, roughly chopped

- For the salsa verde:
- 1 rib-eye steak, about 450g, room temperature
- 150 g puy lentils
- 3 tbsp extra virgin olive oil
- 1 stick celery, sliced
- 2 small carrots, diced
- 2 cloves garlic, chopped
- 100 ml red wine
- 2 bay leaves
- 600 ml beef stock (if using a cube, make half a litre of stock and dilute with 100ml water)
- Pinch of sugar
- Sea salt and black pepper
- 1 large handful of flat-leaf parsley
- 1 smaller handful of mint
- 1 tbsp capers
- 2-3 anchovy fillets
- 1 small clove garlic, finely chopped
- 3 cornichons
- Healthy splash of red-wine vinegar
- 1/2 tsp dijon mustard
- 4 tbsp of extra virgin olive oil
- Black pepper

- 500 g ground beef
- 1 onion, medium size
- 2 garlic cloves
- 1 leek
- 400 g cabbage
- oil, for frying
- 2-3 tbsp soy sauce
- 2-3 tbsp balsamic vinegar
- 1-2 tbsp brown sugar
- salt, pepper
Peanut butter brownies

Keep these small. They're really, really, really quite rich
- 240 g chocolate (mostly dark, I used 200 g dark and 40 g milk chocolate)
- 115 g unsalted butter
- 4 tbsp cocoa powder
- 3 large eggs
- 250 g sugar
- 2 tsp vanilla extract (you can use vanilla sugar instead)
- 4 tbsp peanut butter
- 1/2 tsp salt
- 150 g flour
- 200 g Reese's Peanut Butter Cups (about eight cups)

- 180 ml milk
- 200 g frozen (or fresh) blueberries
Mexican Steak Sandwiches

- 1 tablespoon veg oil
- 1/2 lb thin cut beef clod steak
- 1 onion, halved and sliced
- 1/2 green bell pepper, seeded and sliced
- 1/2 mild Mexican (Anaheim, poblano, pasilla) chile pepper, seeded and sliced
- 1/3 cup minced cilantro leaves
- Mexican hot sauce to taste
- 1 teaspoon beef bouillon granules
- 1/2 cup flavoring liquid, beer, wine, coffee, stock, etc.
