Banana-Caramel Crepes with Nutella

- /2 cup whole-wheat flour, preferably white whole-wheat (see Tip)
- 1/2 cup all-purpose flour
- 1 teaspoon granulated sugar
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup low-fat milk
- 2 teaspoons canola oil or melted butter
- 1/2 cup seltzer water
- 1 tablespoon butter
- 1/4 cup packed brown sugar
- 4 medium bananas, sliced
- 3 tablespoons chocolate-hazelnut spread, such as Nutella
- 1 tablespoon low-fat milk
- 2 teaspoons confectioners’ sugar
Pumpkin-Cranberry Scones with Whipped Maple Butter

- SCONES:
- 2 cups all-purpose flour, plus more for dusting
- 1/3 cup lightly packed light brown muscovado sugar
- 1 teaspoon baking powder
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon fine sea salt
- 1/2 cup cold unsalted butter, cut into pieces
- 1/2 cup very cold buttermilk
- 1/2 cup canned pure pumpkin
- 1 teaspoon pure vanilla extract
- 1/2 cup dried cranberries, soaked in hot water for 30 minutes and
- drained well
- Scant 1/4 cup candied ginger, finely diced
- 1/4 cup heavy cream
- WHIPPED MAPLE BUTTER:
- 1 cup heavy cream
- 1/4 cup pure maple syrup

Blueberry Oat Pancakes with Maple Yogurt

1. Combine oats, cottage cheese, eggs, and vanilla in a blender or food processor
- 1 cup old-fashioned rolled oats
- 1/2 cup low-fat cottage cheese
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup blueberries
- Cooking spray
- 3/4 cup plain Greek-style low-fat yogurt
- 1 tablespoon maple syrup
Beer-Batter Chicken and Waffles

Position a rack in the center of the oven and heat the oven to 425°F
- 1-1/4 oz. (2-1/2 cups) all-purpose flour
- 4 tsp. granulated sugar, plus a pinch
- 1-1/2 tsp. baking powder
- 1/4 tsp. baking soda
- Kosher salt
- 1 12-oz. bottle chilled wheat beer, such as hefeweizen
- 5 Tbs. vegetable oil; more for frying
- 1/4 cup buttermilk

1. Trim the beef of any large fat pieces
- 900 g braising steak, diced into bite-sized pieces
- 4 tbsp plain flour
- 12 slices smoked bacon, chopped
- 480 ml | 2 cups hot beef stock
- 240 ml | 1 cup red wine
- 4 tbsp dried wild mushrooms, soaked in 240ml | 1 cup boiling water
- (reserving the mushroom 'stock')
- 6 banana shallots, roughly chopped
- 3 garlic cloves, finely chopped
- 250 g | 9 oz chestnut mushrooms, diced
- 2 tbsp tomato paste
