Sweet potato waffles or pancakes

This a combination of recipes and trial by error that I have tried
- 2 cups cooked sweet potatoes, mashed
- 1 1/2 cups all purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 2 tablespoons brown sugar
- 2 eggs beaten
- 1 1/2 cups milk
- 1/4 cup melted butter (1/2-stick)
Catfish-Baked with Shrimp Sauce

Preheat oven to 350 degrees
- 1 onion chopped
- 1 bell pepper chopped
- 3 stalks of chopped celery
- 2 cloves garlic minced
- 4 Tbsp butter
- 1 can cream of mushroom soup
- Milk
- 2 cans of shrimp (drained and rinsed)
- 6 catfish fillets (salted and peppered to taste)
GUMBO - Chicken and Okra

Depending on the size of your pot, scoop roux from jar and begin by heating it up
- GUMBO
- Roux
- Onion-chopped finely (might need two if they are small)
- Celery-chopped finely (3 or 4 stalks)
- Chicken broth-2 or 3, 32 oz. boxes
- Water
- 2 cans petit diced tomatoes (drained)
- Salt and pepper to taste
- Chicken tenderloins – judge amount
- 3 or 4 sausage links sliced in 1/2 pieces (use the sausage you like best)
- Tabasco to taste
- Parsley flakes
- Chopped okra
- Gumbo filet (optional)

- 1 (12 fluid ounce) can frozen limeade concentrate
- 12 fluid ounces tequila
- 12 fluid ounces water
- 12 fluid ounces beer
- ice
- 1 lime, cut into wedges
Shrimp & Corn Soup-Hymel's Restaurant

- 2 lbs peeled shrimp
- 1 can petit diced tomatoes
- 1 can cream style corn (15-16 oz)
- 1 large bell pepper
- parsley
- 2 medium onions, chopped finely
- 2 pieces celery, chopped finely
- 1/3 cup roux
- salt and pepper to taste
Chocolate Peanut Clusters

- 1 jar dry roasted peanuts (tall jar)
- 1 jar dry roasted peanuts lightly salted (tall jar)
- 1 bar German Chocolate
- 1 bag milk chocolate chips
- 1 1/2 package of almond bark (choc. or vanilla)
Chicken Enchiladas

Combine ingredients over low heat until cream cheese is melted
- Topping:
- 1 bag frozen chicken tenderloins
- (Cooked and chopped)
- 1 to 2 packs of taco seasoning
- 1 block cream cheese
- 1 can diced green chilies
- 2 cans green enchilada sauce
Shepherd's Pie- Elva's

Cook meat and drain. Saute onions in butter, add carrots and cook until tender
- 1 cup Carrots chopped
- 1 large onion chopped
- 1 can whole kernel corn
- mushrooms chopped
- 1 can drained petit pois peas
- 2 lbs ground beef cooked
- 2 packs brown gravy mix
- instant mashed potatoes
- beef broth
- 1 cup grated sharp cheddar cheese
Broccoli & Swiss Chowder

Cook ham in water for 1 1/2 hours or until meat falls off bone
- 1 lb ham hocks or meaty ham bone
- 1 (10 oz) package frozen chopped broccoli
- 1/4 cup water
- 2 Tbsp all purpose flour
- 1 cup milk
- 1 cup half and half
- 1 cup (4oz) shredded process Swiss cheese
- Dash of pepper
- salt to taste
Beef Pot Roast and Roasted Vegetables

Cut up all of the vegetables and put them in the pot along with all of the other ingredients
- 1 tbsp steak sauce
- 1/2 tsp steak seasoning
- 4 cups beef stock
- 4 tbsp Worcestershire sauce
- 8 medium carrots
- 5 stalks large celery
- 1 large onion
- 2 large potatoes
- 2 lbs beef roast
- 5 fl oz red wine
