- On the side:
- 1 cup all-purpose flour
- 2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- 1 egg
- 1 cup milk
- 2 chicken breast fillets
- 4-6 cups vegetable oil
- 1/4 cup Crystal or Frank's Louisiana hot sauce
- 1 tbsp margarine
- Bleu cheese dressing (for dipping)

Marbled Tres Leches Cake

Preheat oven to 350. Grease a 9x13 inch baking pan
- 9 large eggs, separated
- 1 cup sugar
- 2 tbsp vanilla extract, divided
- 2 cups all purpose flour
- 1/2 cup each hot water and unsweetened cocoa powder
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup whole milk
- 2 cups heavy cream
- 3 tbsp confectioners sugar
- 1 disk (3 oz) Mexican style chocolate, grated, for garnish
Trottole Primavera

Place vegetables in a colander and rinse under warm, running water to partially thaw them; drain well
- 8 oz frozen broccoli florets
- 8 oz frozen sugar snap peas
- 8 oz Italian trottole, uncooked
- 1 tbsp olive oil
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 garlic cloves, minced
- 1/4 cup dry white wine or chicken stock
- 1/3 cup whipping cream
- Juice of 1/2 lemon
- 1/2 cup grated Parmesan cheese
- 1/4 cup thinly sliced fresh parsley
- 1/4 cup thinly sliced fresh basil
- 3 slices prosciutto, torn into pieces and lightly toasted in oven
Spicy Beef

Brown meat in butter. Add in all other ingredients
- 1 1/2 lb round steak (cut into pieces)
- 2 tbsp butter
- 1/4 tsp minced garlic
- 4 tsp minced onion
- 1 tsp salt
- 1/4 tsp chili powder
- 1/4 tsp cinnamon
- 1/4 tsp ground celery seed
- 2 tbsp prepared mustard
- 1 cup beef broth
- 1/4 tsp pepper
Four-Herb Parisian Carrot Salad

Drop carrots into a saucepan of boiling water
- 1 lb baby carrots
- 2 tbsp olive oil
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh oregano
- 1 tbsp chopped fresh thyme
- 1 tsp dried tarragon
- 1 tsp grated lemon peel
- 3 tbsp lemon juice
- 1 tbsp sugar
- 1 head romaine lettuce

No-Bake S'more Pie

To prepare the crust, combine all ingredients in a 9" glass pie plate
- Chocolate Cookie Crust:
- 1 1/2 cup crumbled chocolate chunk cookies
- 2-3 tbsp granulated sugar
- 1/4 cup butter
- Filling:
- 3 cups miniature marshmallows
- 1/2 cup light cream
- 1 cup dairy whipped cream
- 1 dark milk chocolate candy bar
- 1/4 cup graham cracker crumbs
Tomatoes Stuffed with Goat Cheese

Preheat the oven to 400 degrees Slice tops off of the tomatoes and remove seeds and pulp
- 6 medium tomatoes, ripe
- 4 tsp unsalted butter
- 1 1/2 tbsp shallots, minced
- 2 tsp garlic, minced
- 1 1/2 tbsp flour
- 1/3 cup half-and-half
- 1 tbsp dry sherry
- 1/2 cup fresh, soft cream cheese, goat cheese or marscapone
- 2 eggs, separated
- 3 tbsp chives, minced
- 2 tsp fresh savory or tarragon, minced
- salt
- freshly ground white pepper
- 3 cups mixed baby greens
- 1/4 cup vinaigrette
- basil oil
- sea salt, to taste
