- 1 1/2 lb. large shrimp, peeled and deveined
- 2 Tbs. minced fresh ginger

- 1 red or green jalapeño chili, seeded and minced
- 2 Tbs. mirin

For meat Place meat, whole onion, garlic and bay leaves in a pot and add water to cover
- 2 onions cut in half and then sliced
- 1 whole onion peeled
- 4 Chorizo (Mexican or cantimpalo) ( casing removed and sliced
- 1 lb tomatoes, roasted, peeled and seeded and chopped
- 3 chipotle chiles (canned is ok)
- 2-3 lbs of Flank steak, (falda de res)
