1. Preheat grill to medium-high heat
- 1 (1-pound) pork tenderloin, trimmed
- 2 tablespoons whole-grain Dijon mustard
- 1/3 cup chopped fresh cilantro
- 3 thin slices Swiss cheese, halved
- 1/3 cup chopped bread-and-butter pickles
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Morocco - Cauliflower Yogurt Dip

Preheat oven to 180°C fan-force
- 1/2 cauliflower head, sliced
- 2 tablespoons of a Moroccan all spice (If you can’t find one, then you can create your own using the following spices: ground ginger, coriander, white pepper, cinnamon, nutmeg, all spice, turmeric, cumin and paprika. Also known asa Ras El Hanut)

- 1 cup chicken stock or low-sodium broth

- 125 gr (1 stick) butter, unsalted, room temperature
