Thai -Vegan Zucchini Fritters w/Cilantro Mint Chutney

Grate the zucchini on the large holes of a box grater, or in a food processor using the shredding blade
- Fritters Ingredients:
- 3 medium-size Zucchini; ends trimmed
- 1-2 Garlic cloves; peeled & minced
- 3 Green Onions; minced
- 2 Green chillies or to taste; destemmed & finely chopped
- 1/2 cup All-purpose Flour (Maida)
- 2 tbsp Corn Starch/Corn Flour
- 2 tbsp chopped fresh Basil leaves or Cilantro (Coriander) leaves
- 2 tsp freshly grated Lemon zest
- Salt to taste
- 1/8 tsp Black Pepper Powder
- 2-3 tbsp Olive Oil
- Lemon wedges, for serving
- Chutney INGREDIENTS:
- 1 cup packed fresh Cilantro (Coriander) leaves
- 1/4 cup packed fresh Mint leaves
- 1/2 cup sliced onion
- 2 Serrano Green chillies or to taste; destemmed & roughly chopped
- 3 tbsp water
- 1/2 tsp sugar
- 1/2 tsp fresh Lemon juice or to taste
- 1/4 tsp salt or to taste

Stuffed Hash Browns

- 4 ounce unsalted butter, melted and clarified, 1 stick
- 5 cup shredded fresh potatoes, not frozen
- 3 tablespoon sour cream

- 1/2 cup chopped green onion (spring)
- 1 small yellow onion, grated

- 1/2 lb. salted codfish
- 1/2 lb. flour

- 2 tomatoes (plummy)
- 2 cloves garlic
- 1/2 hot pepper-scotch bonnet if possible
- 2 stalks escallion

- 2 tsp. baking powder

In a small saucepan over low heat, combine the olive oil, garlic and anchovies
- 3/4 cup olive oil
- 8 to 10 garlic cloves, very finely chopped
- 12 anchovy fillets
- 4 Tbs. (1/2 stick) unsalted butter

This dish is best when prepared with whole-milk yogurt, but low-fat yogurt can be substituted
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 teaspoon table salt
- 2 pounds boneless, skinless chicken breasts , trimmed of fat

- Masala Sauce
- 3 tablespoons vegetable oil
- 1 medium onion , diced fine (about 1 1/4 cups)
- 2 medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons)
- 2 teaspoons grated fresh ginger
- 1 fresh serrano chile , ribs and seeds removed, flesh minced (see note above)
- 1 tablespoon tomato paste
- 1 tablespoon garam masala (see note above)
- 1 (28-ounce) can crushed tomatoes
- 2 teaspoons sugar
- 1/2 teaspoon table salt
