WHITE CHILI

Heat oil in large pot or Dutch oven over moderate heat
- Garnish:
- 1 Tbs olive oil
- 1 medium onion diced
- 2 stalks celery diced
- 3 medium poblano peppers seeds & ribs removed
- finely diced
- 1 clove garlic minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper, more to taste
- 1 lb ground white meat turkey
- 2 cans white beans ( cannelini) drained
- 4 cups chicken broth
- 3/4 tsp dried oregano
- 1 can hominy, drained
- Salt to taste
- 1/4 cup plain Greek-style yogurt
- 2 Tbs cilantro chopped
- lime wedges
Meatball Stew

1. Preheat the oven to 400% f
- Meatballs:
- 1 lb ground turkey or beef, or beef & pork mixture
- 3/4 cup breadcrumbs
- 1/2 cup milk
- 1/2 tsp unflavored gelatin
- 1 large egg
- 2 tbls minced onions
- 1/2 tsp salt
- Stew 1 tbls olive oil
- 1 large onion
- 2 stalks celery
- 1 large garlic clove, chopped
- 1 medium potato , cubed
- 2 tsp dried thyme
- 15 ounce diced tomato
- 1 tsp red wine vinegar
- 2 cups veggie stock
- 1/2 tsp salt
- 1/2 tsp blk pepper
SAUERBRATEN

Place meat in a large plastic bag
- GRAVY:
- 4 lb Beef rump or sirloin tip
- 1 1/2 c vinegar
- 1 c dry red wine
- 3/4 c water
- 3 medium onions, sliced
- 2 stalks celery, sliced
- 2 carrots, sliced
- 10 whole peppercorns
- 10 whole cloves
- 3 bay leaves
- 2 Tbs sugar
- 1 1/2 tsp salt
- flour
- 3 Tbs oil
- 3 c drippings plus strained marinade
- 5 Tbs flour
- 5 Tbs gingersnap crumbs
KARTOFFEL KLOBE

Cook potatoes in water until tender
- 6-8 baking potatoes (medium size)

- 1/4 c all-purpose flour
- 2 eggs
- 1 tsp salt
- 1/4 tsp nutmeg
- 2 Tbs butter
- 3 slices bread cut into cubes
Beef Burgundy

Brown onions with bacon and butter in dutch oven
- Ingredients
- 16 small white onions
- 6 strips of bacon
- 1/4 cup butter
- 4-6 lb s of beef church - cut into 1 1/4 inch cubes
- 1 1/2 tsp salt
- pepper
- 2 cups Burgundy
- 2 whole cloves of garlic peeled
- 2 cups small sliced mushrooms
- 1 1/2 cups water
- 2 sprigs parsley
- 1 celery top
- 1 carrot quartered
- 1 bay leaf
- 1 sprig fresh thyme
- 6 tbsp flour
- 1/2 cup cold water
ESSENCE

Combine all ingredients thoroughly and store in a air tight container
- 2 1/2 Tbs paprika
- 2 Tbs salt
- 2 Tbs garlic powder
- 1 Tbs black pepper
- 1 Tbs onion powder
- 1 Tbs cayenne pepper
- 1 Tbs dried leaf oregano
- 1 Tbs dried thyme
Dry Rub

Mix the rub ingredients together well in small bowl
- 1/4 tsp cayenne pepper
- 1 tsp ground cumin
- 2 tsp paprika
- 1 tsp dry oregano
- 1 tsp sugar
- 1 tsp salt
- 25 grinds fresh black pepper
SOUTWEST SEASONING
