LEMON RASPBERRY CHEESECAKE

1) In a food processor, finely chop vanilla wafers
- PECAN CRUST:
- 1 cup crushed vanilla wafers (about 25)
- 1 Tbs granulated sugar
- 1/2 cup toasted pecans, coarsely chopped
- 2 Tbs melted butter
- CHEESECAKE:
- 3 OZ white Chocolate, chopped
- 1/3 cup whipping cream
- 3/4 cup granulated sugar
- 3 strips lemon peel cut into 1/2-inch pieces
- 1 1/2 lb cream cheese (3 8oz packages) softened
- 1 cup sour cream
- 2 Tbs fresh lemon juice
- 4 eggs
- 1 cup medium toasted pecans, chopped
- Fresh raspberries
- 2 Tbs whipping cream
- 2 oz white chocolate chopped
- 4 oz cream cheese, softened
- 1 tsp lemon zest
- RASPBERRY-GRAND MARNIER SAUCE:
- 16 OZ fresh or frozen raspberries
- 1/3 cup granulated sugar, add more to taste
- 2 Tbs orange liqueur
PEANUT BUTTER SWIRL CHEESECAKE

To make the crust: Heat oven to 350% F
- Crust:
- 1 1/2 cups chocolate wafer cookie crums
- 4 Tbs butter melted
- Filling:
- 4 packages cream cheese softened
- 1 cup creamy peanut butter
- 1 cup sugar
- 4 large eggs at room temperture
- 1/2 cup sour cream
- 2 tsp vanilla extract
- 3 oz bittersweet chocolate melted
- 6 regular size peanut butter cups 1/4
CHOCOLATE CARMEL CREAM PIE

To make crust: Preheat oven to 350% F
- 8 Tbs unsalted butter
- 2 cups finely crushed chocolat wafer
- 2 Tbs cognac
- 5 oz bittersweet chocolate ( finely chopped
- 4 large egg yolk
- 2/3 cups dark brown sugar
- 2 Tbs dark brown sugar
- 1 Tbs cornstarch
- 1/8 tsp salt
- 2 cups heavy cream
- 2 Tbs heavy cream
- 1 cup & 2 Tbs milk
- 1 1/2 tsp vanilla extract
- 1 Tbs cocoa powder
Spiced Almond-Crusted Chicken / Roasted Red Pepper-Pecan Sauce

1) PREPARE SPICED ALMOND COATING: Place almond in a small dry skillet over medium heat and toast until fragrant
- SPICED ALMOND COATING:
- 1 CUP Almonds
- 1/2 Cup sesame seeds
- 2 Tbs Coriander seeds
- 2 Tbs cumin seeds
- 1 tsp sea salt
- 1 tsp pepper
- 1/2 tsp dried thyme
- ROASTED RED PEPPER PECAN SAUCE:
- 1 cup pecans
- 12 oz bottled roasted red peppers (drained, coarsely chopped)
- 2 Tbs plain bread crumbs
- 3 Tbs pomegranate juice
- 1 Tbs honey
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 3 Tbs olive oil
- CHICKEN:
- 2 egg whites ( lightly beaten together with 1 Tbs water)
- 1/4 cup vegetable oil
- 6 boneless, skinless chicken breast halves (lightly pounded)
- GARNISH:
- finely minced parsley
- finely minced red pepper

Bacon Wrapped Pork Tenerloin
