Greek Spinach Pie (Spanakopita)

Trim and rinse spinach, roughly chop and place in a steamer
- 3 bunches of fresh spinach
- 1 onion finely chopped
- 6-8 spring onions (Scallions) chopped
- 5 oz feta cheese
- 3 oz ricotta cheese
- 1/3 cup freshly grated Parmesan
- 1 tbsp fresh dill chopped
- 1 generous pinch of nutmeg
- 1/2 cup fresh parsley
- 12 sheets of filo pastry, thawed
- 3-4 tbsp of unsalted butter, melted + some olive oil
BREAD PUDDING

Preheat oven to 350%F. Cream eggs and sugar togeather
- 3 large eggs
- 1 1/2 cup sugar
- 3 cups milk
- 1 Tbs vanilla
- 7 slices texas toast
- 6 oz melted butter
- cinnamon, for garnish
