- SALSA:
- 1/4 cup white wine, or reduced-sodium chicken broth
- 1/4 cup reduced-sodium soy sauce
- 1 1/2 teaspoons brown sugar
- 1 garlic clove, minced
- 6 salmon fillets, 4 ounces each
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 medium sweet red pepper, diced
- 1/2 cup seedless red grapes, chopped
- 1/4 cup fat-free Italian salad dressing
- 1 tablespoon canned chopped green chilies
- 1 teaspoon brown sugar
Healthier Beef Stroganoff

This was very good and the kids liked it! (I used Creamette Ready Cut Spaghetti, which upped the calories)
- 1 lb. wide egg noodles
- 1 1/2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, grated
- 1 lb. button mushrooms, cleaned and sliced thin
- 1 lb. top sirloin beef, sliced into 1/4-1/8 inch slices
- salt & pepper, to taste
- 1 teaspoon dried dill
- 1/4 teaspoon thyme
- 2 cups beef broth
- 1/2 cup light sour cream
- 2 tablespoons all purpose flour*
- 4 tablespoons fat free half and half*

- ♦ 1 Box of Betty Crocker Fudge Brownie mix (you will need the additional ingredients listed on box)
- ♦ 8 oz cream cheese, softened
- ♦ 1 cup powdered sugar
- ♦ 1/4 cup of Butter, softened
- ♦ 3 cups milk
- ♦ 2 small packages of instant fudge chocolate pudding
- ♦ 12 oz tub Lite Cool Whip
- ♦ 1 Box of Oreos, Crushed (save a couple whole ones for garnish)
- ♦ 8 oz tub Lite Cool Whip

- 1 1/2 c. flour
- 1 1/2 t. baking powder
- 2 T. italian seasoning
- 1 T. red pepper flakes
- 1 1/2 c. milk
- 2 eggs
- 2 c. shredded mozzarella cheese
- 1 jar marinara sauce
- Pepperoni, sausage or any other toppings you like.

- Directions:
- 4 boneless skinless chicken breasts, pounded to 1/2 inch thickness
- seasoning salt
- 6 slices bacon, cut in half
- 1/4 cup mustard
- 1/3 cup honey
- 2 tablespoons mayo
- 1/2 tablespoon dried onion flakes
- 1 tablespoon cooking oil
- 1 cup sliced fresh mushrooms
- 2 cups shredded Colby/Jack cheese
- Honey Mustard Sauce Recipe
- 1/2 cup mayonnaise
- 2 tablespoons prepared yellow mustard
- 1 tablespoon Dijon mustard
- 1/4 cup honey
- 1 tablespoon dried onion flakes
- 1/2 tablespoon lemon juice
- Mix the mayo, yellow mustard, Dijon mustard, honey, onion flakes and lemon juice together in a bowl. Cover and chill in refrigerator overnight. Serve with chicken.

- 2 lbs raw medium shrimp (peeled and de-veined, with tails removed)
- 1/2 c. soy sauce
- 8 t. cornstarch
- 1/2 T. fresh ginger (grated)
- 6 garlic cloves (minced)
- 4 t. sesame oil (divided)
- 2 c. carrots (shredded)
- 2 c. cabbage (sliced thin)
- 1 (15 ounce) can chicken broth
- 7 green onions (sliced)
- 12 ounces linguini (cooked and drained)
