New England Whoopie Pies

These are HUGE and rich! If I make them again, I will make them smaller and eat less of them!
- Cake:
- 1/2 c. solid vegetable shortening
- 1 c. firmly packed brown sugar
- 1 egg
- 1/4 c. unsweetened cocoa
- 2 c. all purpose flour
- 1 t. baking powder
- 1 t. baking soda
- 1 t. salt
- 1 t. pure vanilla extract
- 1 c. milk
- Filling:
- 1 c. solid vegetable shortening
- 1 1/2 c. powdered sugar
- 2 c. Marshmallow Fluff
- 1 1/2 t. pure vanilla extract
Chicken Tetrazzini (Martha Stewart)

Preheat oven to 400
- Coarse salt and ground pepper
- 6 tablespoons butter
- 1 pound white mushrooms, trimmed and sliced 1/4 inch thick
- 1/2 cup all-purpose flour
- 3 cups milk
- 1 can (14.5 ounces) reduced-sodium chicken broth
- 3/4 cup dry white wine
- 3 cups grated Parmesan cheese
- 1/2 teaspoon dried thyme leaves
- 1 pound linguine, broken in half
- 1 rotisserie chicken, skin removed, meat shredded (about 4 cups)
- 1 package (10 ounces) frozen peas, thawed and drained

- INGREDIENTS
- 1/2-16 oz box (8 oz) Rice Noodles
- 4 tablespoons oil, divided
- 1 egg, beaten
- Optional: 1/2 lb chopped chicken, pork or raw shrimp, deveined
- 4 scallions, chopped
- 1/2 cup coarsely chopped peanuts
- 1-3.25 oz box Pad Thai Sauce
- 2 cups bean sprouts
- Garnish: chopped cilantro and lime wedges
Basic Coleslaw

Toss cabbage in a large bowl with the carrots
- 6 cups shredded cabbage
- 1 carrot, shredded
- 2/3 cup mayonnaise
- 2 tablespoons vinegar
- 2 tablespoons vegetable oil
- 2 1/2 tablespoons sugar, or to taste
- 1/2 teaspoon celery salt
- 1/4 teaspoon salt, or to taste
Chocolate Rum Balls

- 2 lbs. of uncooked shrimp (I chose medium sized)
- 1/2 cup Monterey and Colby Jack Cheese
- 1-2 tsp. Extra Virgin Olive Oil
- 1/4 cup lemon juice
- 1/2 stick melted unsalted butter
- 2 tsp. crushed garlic
- 1/4 cup finely chopped spring/green onions
- 2 tsp. sea salt
- 1 tsp. ground black pepper
Skillet Braised Brussel Sprouts with Bacon & Onions

- 1 lb. fresh Brussel sprouts
- 1/2 c. water

Parmesan Zucchini & Corn

- 2 T. olive oil
- 2 cloves garlic, minced
- 4 zucchini, diced
- 1 c. corn kernals
- 1/4 t. dried basil
- 1/4 t. dried oregano
- 1/4 t. dried thyme
- Kosher salt & freshly ground pepper, to taste
- Juice of 1 lime
- 2 T. chopped cilantro leaves
- 2 T. grated Parmesan cheese, to taste
Bennigan's Monte Cristo Sandwich

- Sandwich:
- slices whole wheat bread
- slices cooked turkey
- slices cooked ham
- slices American cheese
- slices Swiss cheese

- 1 egg
- 1 1/4 cup water
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 1/2 cups flour
- 1 tablespoon baking powder
- vegetable oil (for frying)
Crunchy Honey Garlic Pork Chops

These were delicious! Nice and crispy and sweet
- Glaze:
- 6 pork chops
- 2 eggs
- 4 T. water
- 2 cups flour
- 1 t. salt
- 1 t. black pepper
- 1 t. garlic powder
- Coconut oil or oil of your choice
- 1 1/2 c. honey
- 1/2 c. brown sugar
- 1/2 t. ginger
- dash of cayenne
- 1/2 c. soy sauce
- 1 T. chopped garlic
- 2 T. butter
