- 3/4 pound boneless skinless chicken breasts, cubed
- 1-1/4 teaspoons Greek seasoning
- 1 tablespoon olive oil
- 1 cup sliced fresh mushrooms
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
- 1 can (14 ounces) water-packed quartered artichoke hearts, drained
- 2 cups cooked brown rice
- 1/4 cup crumbled feta cheese

I served this over mashed potatoes and really loved it
- 2.5 lbs. boneless pork, cut into large 2 inch cubes
- 2 Tbsp. oil
- 1 large onion, chopped
- 6 tomatillos, chopped
- 2 mild chili peppers (Anaheim, poblano, pasilla), seeded and chopped
- 1 can whole kernel corn, drained
- 2 garlic cloves, minced
- 0.5 cup chopped cilantro leaves and stems
- 1 Tbsp. chili powder
- 1 tsp ground cumin
- 1 (12 oz.) bottle of beer
- 1 (16 oz.) container salsa
- Sour cream (optional)
- Shredded cheddar (optional)
Quick-Cook, Reduced-Sugar Blueberry or Dark, Sweet Cherry Freezer Jam

Makes 4-5 cups Use very flavorful berries or cherries
- 4 1/2 cups blueberries or 4 cups pitted dark, sweet cherries
- 1 2/3 cups sugar
- 1 1.75 oz. box powdered less or no-sugar-needed pectin
- 3/4 cup cranberry juice cocktail or water
- 3 to 3 1/2 tablespoon fresh lemon juice (use larger amount for blueberries)
- 3/4 teaspoon lemon zest (omit for cherries)
- 1 cinnamon stick (optional)
