Thrilla from Wasilla Chili

In a large heavy stock pot, heat the oil over medium heat
- 2 tablespoons olive oil
- 2 pounds round steak, cut into 1-inch cubes
- 1/2 pound lean ground beef
- 12 ounces spicy sausage, cut into 1/2 inch cubes
- 1 large yellow onion, coarsely chopped
- 1/4 cup regular chili powder
- 6 cloves garlic, chopped
- 2 teaspoons ground cumin
- 1 teaspoon cayenne pepper or crushed red pepper
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 2 14 1/2 ounce cans peeled whole tomatoes, undrained
- 4 cups beef stock or water
- 1 cup chopped fresh cilantro
- 1 stick cinnamon
- 3 bay leaves
- 2 jalapeno peppers, left whole but slit lengthwise 3 times each
- 1 tablespoon yellow cornmeal
- salt and pepper

Wanted to try Penzey's spices, so here we go
- 1 whole chicken
- 1 sweet onion, chopped in chunks
- 2 lemons
- 2-4 Tbs. olive oil
- 2-3 Tbs. Herbes de Provence
- salt and pepper
Buttery Onion Soup Recipe

In a large saucepan, cook onions in butter over low heat until tender and transparent, about 20 minutes
- 2 cups thinly sliced onions
- 1/2 cup butter, cubed
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups milk
- 1-1/2 to 2 cups (6 to 8 ounces) shredded part-skim mozzarella cheese
- Salt and pepper to taste
- Croutons, optional
Swiss Beer Bread Recipe

Divide cheese in half. Cut half of cheese into 1/4-inch cubes; shred remaining cheese
- 4 ounces Jarlsberg or Swiss cheese
- 3 cups all-purpose flour
- 3 tablespoons sugar
- 3 teaspoons baking powder
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 bottle (12 ounces) beer or nonalcoholic beer
- 2 tablespoons butter, melted
Pickled Beets

- Syrup:
- 5 lbs of uniformly small beets, or larger beets than can be cut into pieces
- 2 cups firmly packed light brown sugar
- 2 cups cider vinegar
- 2 cups water
- 2 tsp. salt
- 1 Tbsp. whole allspice
- 1 cinnamon stick, broken into several pieces.

- 1 envelope onion soup mix
- 1 package (9 oz) frozen cut green beans
- 3 small carrots, halved and thinly sliced
- 2 celery ribs, thinly sliced
- 1 Tbsp sugar
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/8 tsp (2 squirts) of Sriracha Hot Chili Sauce
- 1 pound smoked sauage or kielbasa, halved and thinly sliced
- 2 1/2 cups frozen shredded hash brown potatoes (2 1/2 handfulls)
