Italian Bake

By ccavaletti
Mix chicken, sausage, sauce, pasta, onion and peppers in a large bowl
- 3 lbs chicken breasts, cooked and cut into bite size pieces
- 6 Italian sausage links, sliced
- 2 jars spaghetti sauce
- 1 lb pasta - penne, macaroni, shells or whatever you like, cooked according to package and drained
- 1 large package of pizza cheese
- 1 onion
- 2 large bell peppers, red and green, cut into chunks
Chicken Pesto with Pasta

In a Dutch oven, cook pasta according to package directions; drain and return to pan
- 1 pkg (16 oz) cellentani or spiral pasta
- 2 c cubed rotisserie chicken
- 2 medium tomatoes, chopped
- 1 container (7 oz) prepared pesto
- 1/4 c pine nuts, toasted
Taco Meatloaf

Preheat oven to 350 degrees
- 2 lbs ground chuck
- 1/4 medium onion, chopped (the recipe called for 1 onion, but it was too much)
- 1/2 c minced fresh cilantro
- 1 oz taco seasoning mix
- 1/4 c tomato sauce
- 1 large egg
- 1 c crushed tortilla chips
Taffy Apple Martini

Chill 2 6 oz martini glasses in freezer
- 1 Tbsp powdered sugar
- 1/2 c vodka
- 1/2 c Sour Apple Pucker
- 1 tsp Grand Marnier
- 1/2 tsp cinnamon
- 1/4 c sweet and sour mix
- 1 tsp Amaretto
- 2 slices green apple, optional garnish
Hungarian Goulash

Brown meat in a little olive oil
- 1 lb beef - stew meat or cubed roast
- 1 lb onion, chopped
- 3 Tbsp paprika
- 3 cloves garlic, minced
- 2 c water (enough to cover meat)
- 8 oz crushed tomatoes, drained
- cooked rice or noodles
Panna Cotta al Mango

Pour the cream and milk into a heavy saucepan
- 1-1/2 c heavy cream
- 1/2 c milk
- 3 unflavored gelatin sheets or leaves
- 2 Tbsp sugar
- 1 Tbsp honey
- 1 fresh mango
Chicken Pot Pie Soup

In a large bowl, mix flour and salt; cut in shortening until crumbly
- Toppers:
- 2 c all-purpose flour
- 1-1/4 tsp salt
- 2/3 c shortening
- 5 to 6 Tbsp 2% milk
- Soup:
- 2 Tbsp butter
- 1 c cubed peeled potatoes
- 1 c chopped sweet onion
- 2 celery ribs, chopped
- 2 medium carrots, chopped
- 1/2 c all-purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 cans (14.5 oz each) chicken broth
- 2 c shredded cooked chicken
- 1 c frozen petite peas
- 1 c frozen corn
Garlic Dip

- 16 oz cream cheese
- 3/4 c mayonnaise
- 1/2 c (scant) sweet pickle juice
- 1 Tbsp garlic powder
- 1 tsp onion salt
Ham and Cheese Potato Bake

Preheat oven to 350º. Spray a 13x9-inch baking dish with cooking spray
- 4 large Russet potatoes, peeled and sliced lengthwise 1/4 inch thick
- 1-1/2 c diced ham, divided
- 2 c broccoli florets, divided
- 1-1/2 c shredded mozzarella cheese, divided
- 1/2 shredded Colby Jack cheese
- 1/4 c chopped fresh parsley
- 2 Tbsp unsalted butter
- 1 small yellow onion, chopped
- 1 clove garlic, minced
- 1-1/2 c heavy whipping cream
- 1 c whole milk
- 2 large eggs
- 2 tsp kosher salt
- 1 tsp ground black pepper
- I doubled this, but had a whole pan leftover.
Fruit Skewers with Easy Cheesecake Dip

Thread 1 piece each cantaloupe, honeydew, pineapple and strawberry onto skewers
- Dip:
- 1/2 small cantaloupe, peeled, seeded, and cut into 1-inch pieces
- 1/2 small honeydew, peeled, seeded, and cut into 1-inch pieces
- 1/2 small pineapple, peeled, cored, and cut into 1-inch pieces
- 1 quart fresh strawberries, halved
- 24 (6-inch) wooden skewers
- 1 (8 ounce) package 1/3 less fat cream cheese
- 1/4 c milk
- 1/4 c confectioner's sugar
- 1/2 tsp vanilla extract
