Preheat oven to 375º. Grease a 13 x 9" baking dish
- 2 (24 oz) packages refrigerated mashed potatoes
- 1/2 (8-oz) package cream cheese
- 3/4 tsp ground black pepper
- 3-1/2 c shredded rotisserie chicken breast, divided
- 2 c shredded Cheddar cheese, divided
- 1 c chopped green onion, divided
- 1 (12 oz) package fresh broccoli florets, divided
- 6 slices bacon, cooked, crumbled and divided
Loaded Potato Soup

In a large Dutch oven, cook bacon over medium heat until crisp
- 6 slices thick-cut bacon, chopped
- 1 medium yellow onion, chopped
- 3 Tbsp all-purpose flour
- 2 (32 oz) cartons chicken broth
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 4 lbs russet potatoes, peeled and chopped
- 1 c heavy whipping cream
- Sliced green onion
- Shredded Cheddar cheese
Tangy Tuna Panini

Preheat a panini press. In a medium bowl, flake the tuna
- 2 (6 oz) cans tuna packed in oil, drained
- 1/2 c extra-virgin olive oil, divided, plus more for brushing
- Grated peel of 1 lemon
- Juice of 1/2 lemon
- 1/2 c finely chopped red onion
- 1 rib celery, finely chopped
- 2 Tbsp finely chopped sun-dried tomatoes, optional
- Salt and pepper
- 8 slices country bread
- 16 pepperoncini, halved lengthwise
- 4 large eggs
Seared Fish with Kiwi-Avocado Salsa

Season fish. In a large nonstick skillet, heat oil over medium heat
- 4 fillet (6 oz each) of white fish (such as cod)
- 2 Tbsp olive oil
- 2 kiwis, peeled and chopped
- 2 oranges, peeled and chopped
- 1 avocado, peeled, pitted and chopped
- 1/4 c red onion
- 2 Tbsp fresh lime juice
- 2 tsp chopped peeled fresh ginger
- Fresh cilantro for garnish
Kickin Mini Meatloaves

- 1 sweet potato (10 oz.), peeled and cut into 1/3-inch cubes
- 3 slices firm white bread, torn
- 1 1/2 pounds lean ground beef
- 1 egg
- 1 small onion, finely chopped
- 2 tablespoons chopped cilantro
- 1 tablespoon finely chopped chipotle chiles in adobo sauce, plus 2 tsp. sauce
- 6 tablespoons ketchup
- 2 cloves garlic, finely chopped

Chicken à la Queen

Bake the pastry shells according to package directions
- 8 ounces puff pastry shells, such as Pepperidge Farm
- 2 tablespoons extra-virgin olive oil (EVOO)
- 4 ribs celery with leafy tops, chopped
- 3 carrots, chopped
- 1 large onion, chopped
- 1 bay leaf
- Salt and freshly ground pepper
- Half of a red bell pepper, seeded and chopped
- 3 tablespoons butter
- 2 tablespoons flour
- 1 32 ounce container (4 cups) chicken broth
- 2 pounds skinless, boneless chicken breast, cut into 1-inch cubes
- 1 cup heavy cream or half-and-half
- 1 small bunch (about 10 ounces) asparagus, trimmed and cut on a diagonal into 1-inch pieces
- 1 ounce green peas
- 3 tablespoons chopped fresh tarragon

- 1 1/2 pounds ground beef sirloin
- 1 1/2 pounds ground beef chuck

Ravioli with Tomatoes and Olives

- 1 small onion, diced
- 2 - 14-1/2 oz cans diced tomatoes with olive oil, basil, garlic and spices, undrained

- 1 pkg (8 oz) cream cheese, softened
- 6 thin scallions, chopped
- 4 large radishes, grated on the large holes of a box grater
- 1 small carrot, grated
- 1 small rib celery, finely chopped
- 1/2 small red bell pepper, seeded and finely chopped
- 1 large clove garlic, grated or finely chopped
- 4 everything bagels, split and toasted
- 8 leaves lettuce, trimmed
- 4 slices red onion
- 4 slices tomato
