In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat

  • 1 tablespoon extra-virgin olive oil (EVOO)
  • 1/4 - 1/3 pound chorizo, casing removed, finely chopped (about 1 cup)

  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce (eyeball it)
  • Grated peel and juice of 1 lime
  • 1 cup chicken broth
  • 1 8 ounce can tomato sauce
  • 4 Portuguese rolls or submarine rolls, split
  • 4 deli slices Swiss cheese
  • 3 - 4 large dill or half-sour pickles, chopped
  • 1 bag plantain or other chips

In a Dutch oven, heat oil over medium heat

  • 1 Tbsp canola oil
  • 1-1/2 lbs ground chicken
  • 1 small onion, chopped
  • 1 celery rib, finely chopped

  • 1 bottle (12 oz) buffalo wing sauced (It wasn't that spicy, maybe have more on the table)

  • 1/4 tsp pepper
  • 9 lasagna noodles
  • 1 carton (15 oz) ricotta cheese
  • 1-3/4 c (7 oz) crumbled blue cheese, divided (I used goat cheese)
  • 1/2 c minced Italian flat leaf parsley
  • 1 egg, lightly beaten
  • 3 c (12 oz) shredded part-skim mozzarella cheese
  • 2 c (8 oz) shredded white cheddar cheese
