Sloppy Cubanos

In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat
- 1 tablespoon extra-virgin olive oil (EVOO)
- 1/4 - 1/3 pound chorizo, casing removed, finely chopped (about 1 cup)
- 1 pound ground pork
- 1 onion, finely chopped
- 2 cloves garlic, grated or finely chopped
- 2 teaspoons paprika (about 2/3 palmful)
- 2 teaspoons ground coriander (about 2/3 palmful)
- 1 teaspoon allspice (about 1/3 palmful)
- Salt and pepper
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce (eyeball it)
- Grated peel and juice of 1 lime
- 1 cup chicken broth
- 1 8 ounce can tomato sauce
- 4 Portuguese rolls or submarine rolls, split
- 4 deli slices Swiss cheese
- 3 - 4 large dill or half-sour pickles, chopped
- 1 bag plantain or other chips
Buffalo Chicken Lasagna

In a Dutch oven, heat oil over medium heat
- 1 Tbsp canola oil
- 1-1/2 lbs ground chicken
- 1 small onion, chopped
- 1 celery rib, finely chopped
- 1 large carrot, grated
- 2 garlic cloves, minced
- 1 can (14-1/2 oz) diced tomatoes, drained
- 1 bottle (12 oz) buffalo wing sauced (It wasn't that spicy, maybe have more on the table)
- 1/2 c water
- 1-1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 9 lasagna noodles
- 1 carton (15 oz) ricotta cheese
- 1-3/4 c (7 oz) crumbled blue cheese, divided (I used goat cheese)
- 1/2 c minced Italian flat leaf parsley
- 1 egg, lightly beaten
- 3 c (12 oz) shredded part-skim mozzarella cheese
- 2 c (8 oz) shredded white cheddar cheese

- 3/4 lb ground beef
- 3/4 lb ground pork
- 1/3 c Parmesan cheese, grated
- 1/3 c seasoned bread crumbs
- 2 cloves garlic, minced
- 1 large egg
- 1 Tbsp milk
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes
- kosher salt and freshly ground pepper, to taste
- Sauce:
- 2 c whole milk
- 3 Tbsp unsalted butter
- 3 Tbsp all-purpose flour
- 1/8 tsp ground nutmeg
- kosher salt, to taste
- 1-1/2 c mozzarella cheese, grated
Creamy Parmesan Pasta

Cook pasta according to package directions
- 12 oz (2-1/2 c) uncooked dried gemelli pasta (used a whole 16 oz box of pasta and doubled the sauce)
- 2 Tbsp salted butter
- 3 c broccoli florets
- 1 c whipping cream
- 1/4 c salted butter
- 1 c finely shredded Parmesan cheese
- 6 oz cooked chicken strips
- 1/2 c chopped cooked bacon
- 1/2 tsp garlic salt
- shredded Parmesan cheese, if desired
Mediterranean Tuna Salad

Drain the oil from the tuna into a medium bowl
- 2 cans (5 oz ea) tuna packed in olive oil
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 head iceberg lettuce, chopped
- 4 c baby arugula, chopped
- 6 Tbsp pesto
- 2 lemons, 1 juiced and 1 sliced into wedges
- Salt
- 1 pinch cayenne
- 1/4 lb pitted kalamata olives (about 3/4 cup), halved
- 1-1/4 c grape tomatoes, quartered
Italian Pot Roast with Potatoes & Carrots

In a 5- to 6-qt. slow cooker, stir together the tomato paste, vinegar and flour until blended

- 2 tablespoons balsamic vinegar

- 2 1/2 pounds beef chuck roast, tied

- 1 cup shredded cheddar cheese
- 1/2 c sliced ripe olives
- 2 Tbsp fresh cilantro, chopped
- 2 Tbsp green onions, sliced
- 1/2 tsp garlic powder
- 4 - 10 " flour tortillas
- jalapeno peppers, to taste
Bacon-Wrapped Pork Tenderloin

In a small bowl, stir together rosemary and next 3 ingredients; rub over tenderloins
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp chopped fresh thyme
- 1 tsp ground black pepper
- 1/2 tsp salt
- 2 (1 pound) pork tenderloins
- 6 slices bacon
- The recipe for Cheesy Broccoli and Tomato Pasta was with this recipe and I made them together.
