Country-Style Thai Red Curry with Beef, Shiitakes & Edamame

This curry is called country-style because its rustic and simple
- 1 lb. flank steak
- 5 oz. fresh shiitake mushrooms
- 2 Tbs. vegetable oil
- 3 Tbs. red curry paste, either store-bought or homemade
- 2-3/4 cups low-salt chicken broth
- 5 wild lime leaves, torn or cut into quarters (optional)
- 1-1/2 cups frozen shelled edamame (soy beans), thawed
- 3 Tbs. fish sauce
- 1 Tbs. palm sugar or light brown sugar
- 1/4 tsp. kosher salt; more to taste
- A handful of fresh Thai or Italian basil leaves
- Hot cooked rice or rice noodles for serving

1. To make the brown butter pumpkin cupcakes: preheat oven to 325 degrees F
- For the Brown Butter Pumpkin Cupcakes:
- 3/4 cup unsalted butter, at room temperature
- 1 2/3 cups all-purpose Gold Medal flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/8 teaspoon ground cloves
- 1 cup canned pumpkin puree (not pie filling)
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- For the Salted Caramel Frosting:
- Salted Caramel Sauce:
- 2 cups granulated sugar
- 12 tablespoons unsalted butter, at room temperature, cut into pieces
- 1 cup heavy cream, at room temperature

- Frosting:
- 3/4 cup butter, at room temperature

- 1 Box Betty Crocker Chocolate Cake
- 1 1/4 Cups Baileys
- 1/2 Cup Vegetable Oil
- 2 Eggs
- 1 1/2 Cup Peanut butter
- 1 Cup Powdered Sugar
- 1/2 Stick Butter
- 1 Teaspoon Vanilla
- 1/4 Teaspoon Salt
- 1/2 Cup Heavy Cream
Chicken with Mushrooms in a Light Balsamic Cream Sauce

Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat
- 1/2 pound egg noodles (I use no yolks), cooked according to package directions
- 2 tablespoons extra virgin olive oil
- 2 large boneless skinless chicken breasts cut into half lengthwise so that you end up with 4 pieces of chicken
- Salt, black pepper, garlic powder
- 2 tablespoons butter
- 8 ounces button mushrooms, stems removed, cleaned, and sliced
- 3 garlic cloves, minced
- 1 small yellow onion, finely chopped
- 1/4 teaspoon dried thyme
- 2 tablespoons all purpose flour
- 1 1/2 cups chicken stock
- 1 tablespoon balsamic vinegar (do not substitute any other vinegar)
- 3 tablespoons half and half
- Fresh, chopped parsley for garnish

- 5 cloves garlic, minced

- 1 to 1 1/2 tablespoons chili garlic paste
