Soft & Chewy Peanut Butter Cup Cookies

Preheat oven to 350°F. Cream shortening, butter, and sugar in a large mixing bowl
- 1/4 cup shortening
- 1/4 cup butter
- 1 cup sugar
- 1 egg
- 3/4 cup buttermilk
- 1 tsp vanilla
- 2 cups flour, sifted before measuring
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened cocoa
- 24 miniature peanut butter cups, chopped into pieces

- 3/4 cup fresh lemon juice
- 1/3 cup sugar

- Whipped cream, for serving

- Ingredients:
- 1 tablespoon vegetable oil
- 1 pound lean ground beef
- 1 onion, finely chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried basil
- 1 teaspoon paprika
- 1 teaspoon salt
- freshly ground black pepper
- 1 28-ounce can diced tomatoes in juice
- 1 cup beef stock
- 1/4 cup ketchup
- 1/2 pound dried elbow macaroni (or other pasta)
- grated Parmesan cheese OR 1 1/2 cups grated Cheddar cheese

- 1 can (8 ounces) unsweetened crushed pineapple
- 1/2 cup unsweetened pineapple juice
- 3 tablespoons sugar

- 1/4 teaspoon coconut extract
- 6 ice cubes

In a large bowl, combine the first six ingredients
- GRAVY:
- 3/4 cup seasoned bread crumbs
- 1 medium onion, chopped
- 2 large eggs, lightly beaten
- 1/3 cup minced fresh parsley
- 1 teaspoon coarsely ground pepper
- 3/4 teaspoon salt
- 2 pounds ground beef
- 1/2 cup all-purpose flour
- 2-3/4 cups 2% milk
- 2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
- 1 tablespoon Worcestershire sauce
- 1 teaspoon coarsely ground pepper
- 3/4 teaspoon salt
- NOODLES:
- 1 package (16 ounces) egg noodles
- 1/4 cup butter, cubed
- 1/4 cup minced fresh parsley

- 2 large Vidalia onions cut into 1/4-inch-thick rounds, separated into rings
- 3 Tbsp. melted butter, olive oil, or a combination of both
