- 2 cups ice water
- 2/3 cup bourbon
- For frying
- 1 1/2 cups all-purpose flour
- 1 cup rice flour
- 2 tablespoons cornstarch
- 1 tablespoon kosher salt
- 1 tablespoon paprika
- 1 1/2 to 2 teaspoons cayenne
- 2 teaspoons black pepper
- 2 1/2 cups buttermilk
- Dash of hot sauce
- 9 cups peanut oil

- 1 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, slightly softened

- 3 Tbls vegetable oil
- 3 lbs boneless beef chuck, cut into 1 inch pieces
- 2 medium onions, chopped
- 2 stalks of celery, chopped
- 3 Tbls all purpose flour
- 1 Tbl garlic, minced
- 1 Tbl tomato paste
- 2 tsp fresh thyme, chopped
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 bottle (about 11 oz) Guinness drought
- 1 C reduced-sodium beef broth
- 3 carrots, peeled and cut into 1 inch pieces
- 4 small turnips, (3/4 lb) peeled and cut into 1 inch pieces
- 4 medium Yukon old potatoes, (1 lb), peeled and cut into 1 inch pieces
- 1/4 C fresh parsley, chopped fine
