Roasted Root Vegetables with Vinagrette

Kelsey Nixon Recipe
- For the Vegetables:
- 1/4 cup extra-virgin olive oil
- 1 large sweet potato, peeled, halved lengthwise, and cut crosswise into 1-inch pieces
- 2 large carrots, sliced into 1/2-inch-thick rounds
- 2 large parsnips, peeled and sliced into 1/2-inch-thick rounds
- 1 medium red onion, cut into 1-inch-thick wedges
- 5 garlic cloves, smashed
- 1 tablespoon fresh thyme leaves, chopped
- Kosher salt and cracked black pepper
- For the Cider Vinaigrette:
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Digon mustard
- 1 teaspoon honey
- 1 small shallot, finely chopped
- Kosher salt and cracked black pepper

The recipe I found called for a jar of bacon bits
- 8 8 8 slices Bacon, center cut crisp and crumbled cooked
- 4 4 4 Green onions
- Condiments
- 1 1/2 1 1/2 1/2 cups Mayonnaise
- 1 1 1 Salt and pepper
- 1/2 1/2 1/2 cup Almonds
- 2 2 2 cups Cheddar cheese
Cole Slaw (oil & vinegar)

Mix vinegar and sugar. Add oil
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 2 tablespoons peanut or vegetable oil, eyeball it
- 1 sack, 16 ounces, shredded cabbage mix for slaw salads
- 1 teaspoon salt
- Salt and pepper

- If you want to coat the balls with chocolate, you will need:
- 1/2 cup SKIPPY® Creamy Peanut Butter
- 3/4 cup butter, divided
- 2 cups confectioners sugarl
- 1 cup semisweet chocolate chips
Coleslaw, the old fashioned way

Prepare the mayonnaise in a blender or food processor
- 1/2 -1 cup paleo mayonnaise, to taste
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried dill
- 1/2 teaspoon black pepper
- juice of 1/2 lemon
- 2 Tablespoons Apple Cider Vinegar
- 1-2 Tablespoons local honey (optional)
- 3 ribs of celery, shredded
- 3 carrots, peeled and shredded
- 1 head of green cabbage, shredded
- 3 green onions, chopped
Bread stuffing, Aunt Grace's old fashioned

This recipe has been passed down through 4 generations of our family
- 1 lg onion chopped (about 1 cup)
- 2 sticks butter
- 1 C celery,finely chopped
- 2 tsp poultry seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 to 1 3/4 C broth
- 28 slices bread, cubed
- 1/2 C parsley, chopped

- 2 egg whites
- 1/4 tsp cream of tartar
- pinch of salt
- 2/3 C sugar
- 1/4 tsp almond extract
- 1 tsp vanilla
- 1 C pecans or walnuts, chopped (optional)
- 1 C mini chocolate chips

- 2 sticks (8 ounces) unsalted butter
- 1 cup confectioners' sugar
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 1 large egg
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- Sprinkles, for garnish
Oatmeal Cookies with Cherries

- 1/2 cup butter room temperature
- 1/2 cup Golden Barrel Organic Brown Sugar
- 1/4 cup white sugar
- 1 egg
- 1 tbsp Golden Barrel Blackstap Molasses
- 3/4 cup flour
- 1 1/2 cup rolled oats
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cornstarch
- 3/4 cup dried cherries
- 1/2 cup chopped walnuts
- 1/2 cup dark chocolate chips

- 1 large egg (room temperature)

- 1 1/2 cups rolled oats
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
