Cranberry Orange Scones

Great for breakfast or afternoon tea
- 2 C all purpose flour
- 10 tsp sugar - divided
- 1 Tbl grated orange peel
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/3 C unsalted COLD butter, cut in cubes
- 1 C dried cranberries
- 1/4 C orange juice
- 1/4 C half and half cream
- 1 egg, room temperature, lightly beaten
- 1 Tbl milk
Chicken Detox Soup

- 1 1/2 pounds boneless skinless chicken breast
- 2 quarts chicken broth
- 1 large onion, peeled and chopped
- 3 cups broccoli florets
- 2 1/2 cups sliced carrots
- 2 cups chopped celery
- 1 1/2 cups frozen peas
- 1/4 cup chopped parsley
- 3-4 garlic cloves, minced
- 3 tablespoons fresh shredded or grated ginger
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1/4 – 1/2 teaspoon crushed red pepper
- 1/4 teaspoon ground turmeric
- Salt and pepper
Benedictine Sandwiches

A Kentucky favorite
- 8 strips bacon
- 1 large cucumber, peeled and seeded
- 8 ounces cream cheese, softened
- 1 1/2 tablespoons mayonnaise
- 1 1/2 tablespoons finely chopped red onion
- Kosher salt and freshly ground black pepper
- 8 slices country wheat bread
- 2 cups fresh borage petals or microgreens or baby arugula
Pineapple Salsa

mix all ingredients together, chill for at least an hour
- 1 can (20 oz) pineapple tidbits or chunks
- 1/2 C red bell pepper diced
- 1/4 C green onions, diced
- 2 tsp cilantro or parsley chopped
- 2 tsp jalapeno chiles, diced
- 1 tsp grated lime peel.

King Arthur recipe
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/4 to 3/4 teaspoon ground nutmeg,* to taste
- 1 tablespoon baking powder
- 3/8 cup (6 tablespoons) cold butter, cut into pieces
- 2 large eggs
- 1/3 cup full-fat or low-fat (not nonfat) vanilla yogurt or sour cream
- 1/2 teaspoon almond extract
- 1 cup diced peach, peeled or not; fresh, frozen/thawed, or canned
- coarse white sparkling sugar, optional; for sprinkling on top
- Don't like nutmeg? Substitute ground cinnamon, or simply leave out the spice altogether.

- 1/4 C COLD butter
- 4 oz COLD cream cheese

- 2 large juice oranges, washed; one orange sliced, remaining orange juiced
- 1 large lemon, washed and sliced
- 1/4 C granulated sugar or superfine
- 1/4 C Triple Sec
- 1 750ml bottle medium-bodied chilled red wine

great crock pot appetizer for a crowd
- 1 1/2 cups ketchup
- 1/2 cup BBQ sauce (any kind)
- 2/3 cup bourbon
- 1 cup brown sugar (packed)
- 5 lb pkg of mini hot dogs, franks or smoked sausages
- dash of Worcestershire sauce

- 2 cups sugar
- 1/2 cup butter, softened
- 1/2 cup canola oil
- 1 teaspoon coconut extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2-1/4 cups cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 2 cups sweetened shredded coconut, chopped
- 1/4 teaspoon cream of tartar
- 2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
- 2/3 cup butter, softened
- 4-1/3 cups confectioners' sugar
- 1-1/4 teaspoons coconut extract
- 2 cups sweetened shredded coconut, toasted
