- 2 cups quinoa
- 1 carrot, diced
- 1 stalk celery, diced
- 1 white turnip, diced
- 3 tomatoes, diced
- 1 cup diced cucumber
- 3 green onions (white parts only), chopped
- 1/4 cup chopped flat-leaf parsley
- 2 tbsp chopped fresh mint
- 1/4 cup lemon juice
- 1 tbsp red wine vinegar
- 1 clove garlic, pressed or minced
- 3/4 tsp salt
- 1/4 tsp black pepper
- Dash hot pepper sauce
- 1/3 cup extra-virgin olive oil
Crispy Onion Rings

Heat your oil to 350 degrees over medium high heat
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 2 tablespoons instant mashed potatoes
- big pinch of cayenne
- 1 cup cold club soda
- 2-3 cups Panko (Japanese-style breadcrumbs), or as needed
- fine salt to taste
- vegetable oil for frying
- 2-3 yellow onions, cut into 1/4-inch rings
Cheesy Chex Ranch Mix

- 3 Granny Smith apples, cored and cut into 1-inch pieces (about 4 cups)
- 2 cups whole fresh cranberries
- 3/4 cup sugar
- 1-1/2 cups old-fashioned oats (not quick-cook)
- 1/2 cup packed light-brown sugar
- 1/3 cup all-purpose flour
- 1/2 cup chopped pecans
- 1/2 cup (1 stick) unsalted butter, melted
