Cranberry-Apricot Sauce

- 1 cup sugar
- 1/2 cup fresh orange juice
- 1 tablespoon red wine vinegar
- 2 (1/4-inch-thick) fresh ginger slices
- 1 (3-inch) cinnamon stick

Heat oil in large saute pan over high heat
- 3 lbs bottom round roast, cut into 1/2 inch cubes
- Salt & pepper
- 1/4 cup canola oil
- 2 large onions, diced
- 4 cloves garlic, minced
- 1 tbsp cumin
- 1 tbsp dried oregano
- 3 tbsp chili powder
- 2 tbsp brown sugar
- 1 (28 oz) can diced tomatoes
- 1 (15 oz) can black beans
- 1 (4 oz) can chopped green chilis
- 3 jalapeno peppers, seeded and chopped

- 1 egg
- 3 tablespoons milk
- 1/2 teaspoon vanilla
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups all-purpose flour
- 1 pound vanilla-flavored candy coating, coarsely chopped
- 20 bite-size chocolate-covered peanut butter cups, unwrapped
