Pig Cake

- Cake:
- 1 box yellow cake
- 1 stick butter, melted
- 1 - 14 ounce can mandarin oranges
- 4 eggs
- 1 teaspoon vanilla extract
- Topping:
- 1 - 4 ounce box instant vanilla pudding
- 1 - 20 ounce crush pineapple
- 1/2 cup powdered sugar
- 4 ounces whipped topping
EGG AND SAUSAGE CASSEROLE

- 1 lb sausage, browned
- 6 eggs
- 2 slices bread, diced
- 2 cups milk
- 1/2 tsp salt

Sour Cream Coffeecake

Mix batter ingredients together
- Batter:
- 1 cup butter
- 2 cups white sugar
- 2 eggs
- 1 cup sour cream
- 1/2 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- Filling:
- 1/3 cup flour
- 1/2 cup brown sugar
- 2 Tablespoon melted butter
- 1 teaspoon ground cinnamon
ONE PAN DOUBLE FUDGE BROWNIES

Melt oil and chocolate in 8 inch square pan in 350 degree oven
- 1/3 cup oil
- 2 square unsweetened chocolate
- 1 cup sugar
- 1 egg
- 1 1/4 cup flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1 cup chocolate chips
- 1/2 cup walnuts (optional)
POTATO DOUGHNUTS

In large bowl, combine potatoes, sugar, buttermilk and eggs
- 2 cups hot mashed potatoes (mashed with butter and milk)
- 2 1/2 cups sugar
- 2 cups buttermilk
- 2 eggs, lightly beaten
- 2 Tbsp butter, melted
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 6 1/2 - 7 cups flour

Breakfast Quiche

A crustless quiche--great for breakfast or main meal
- 4 eggs
- 1/2 cup swiss cheese (shredded)
- 1/2 cup cheddar cheese (shredded)
- 1 cup cottage cheese (small curd)
- 1/4 teaspoon salt and pepper
- 1 teaspoon dry mustard
- 1 or 2 shakes of tabasco sauce
- 8 ounces mushrooms (sliced)
- 2 Tablespoons butter
- 2 cups ham (diced)
- 1 small can green chile (mild/chopped)
THE GREAT ALASKAN MARGARITA “GRANDE”

Serve over ice or fill a blender ¾ full with ice cubes
- STEP #1:
- Make a syrup by putting ½ cup of sugar in a pan with 1 cup of water. Bring to a boil while stirring, then cool.
- STEP #2:
- Mix the following ingredients together and stir well:
- o the syrup make in Step 1
- o 2 cups Sweet and Sour mix
- o ½ cup pure lime juice (fresh is best)
- o ½ cup tequila
- o ¼ cup triple sec
BURGUNDY CHICKEN

1. Heat one tablespoon oil in a large heavy skillet over medium heat
- 2 tbsp.olive oil, divided
- 1 small onion, chopped
- 1/2 small carrot, chopped
- 1 celery stalk, chopped
- 2 garlic cloves, sliced

- 2 lbs boneless, skinless chicken thighs
- 1/2 cup red wine
- 1/2 cup reduced sodium chicken broth
- 1/2 bay leaf
- 2 tbsp chopped parsley
